Jes Style Spicy Ellu Curry RECIPE#155








Step 1:-  Make a smooth paste with  1 table spoon of coriander seeds, 2 cardamom , 5-6 black  pepper, 2-3 cloves, 1/2 cup of chopped italian parsley , 5-9  curry leaves , and  half of a bay leaf.   .  Add  2 teaspoon of  kashmiri  Chilli powder  1 1/2 teaspoon of turmeric powder 1 teaspoon of  garam masala,  2 -3 table spoon of ginger garlic paste  and salt  to the paste  , and combine well . And keep aside.

Step 2:-    Marinate  3 -4 lb of  Lamb/Goat/Beef neck bones  with the Step 1 paste and keep for 8-12 hours.


Step 3:-   Add   finely chopped   medium sized onion ( 1 nos) ,  and a medium sized tomato .

Step 4:-   Add 3-4  cups of water and cook for 1-2 hours on  low-medium flame , until its well done .



Step 5:-  Jes Style Spicy  Ellu Curry  is ready ........Enjoy with Chapattis/ tortillas / fulkas /steamed rice .......... JA-Mathew-. .........:) :)

Naan ( Indian Oven -Baked Flat bread) RECIPE#154













Step 1:-Prepare  'NAAN dough '.

                     I -    Mix 1 teaspoon of sugar  in  1/2 cup of Luke warm water  and  add 1/2 teaspoon  of yeast , 1/2 table spoon of sugar  and  1/2 teaspoon of salt   keep aside to' rise' .


  II - Combine 1 1/2 cups of atta /wheat flour  and  1 1/2  cup of maida ( whole purpose flour) 



1/2 a teaspoon of baking powder , 1 teaspoon of baking soda , 



 a teaspoon of salt ,

egg ( one beaten ) ,


1/2  a cup of whole milk ,


3-5 teaspoons of olive oil ,


and step I ' raised ' yeast.


III :- Knead well  ( Add more water if needed ) ,until  you get a soft, springy dough.

                  
             

 IV-  Cover the ''dough'' with a warm damp cloth.  And keep  in  warm place ( preferably 78 degree Fahrenheit)   for 1  1/2 hour ( until the dough doubles its size   as in the picture below) .

                  V-  Knead  again and ''keep it '' for another 1/2 more  hour. 



Step 2 :- Preheat the  Oven to 500 degree Fahrenheit .

Step 3:- Spread the dough( medium sized ball from  the dough) on  a pre greased cookie sheet  in    triangular/oval  shape. 


Step 4:- Bake  for 3-5 minutes  in lowermost  rack, until it  browned  and puffed up. Then flip 'the naan' and bake for another 1 minute 


Step 5:-  Remove the naan from the oven and" brush'' with a bit of butter  as in the picture .



Step 6 :-   Naan ( Indian  Oven -Baked Flat bread)  is ready .......: -)  :-)  Enjoy  with  curry :).... - JA- Mathew-

Chicken Pickle ( Kottayam Style ) RECIPE#153









Step  1:- Marinate 2 lb/ 1  kg of  chopped chicken thighs  with salt, 1  teaspoon of turmeric powder and  1/2 teaspoon of kashmiri chilli powder for 2- 3 hours.


Step  2:- Microwave the marinated chicken for 15 minutes on high power . and keep aside .


Step 3:- Heat a pan and and add 2 cups of vegetable oil , ' shallow fry' the microwaved chicken  and keep aside.




Step 4: Finely chop 1/4 of a onion , 2-3'' of ginger root  , 7-12  garlic cloves , 2-3 green chillies, and 2-3 sprigs  of curry leaves and keep aside.


Step 5:-   In the same  pan ( step 3)  and in the same oil , splutter 2 teaspoon of mustard seeds. ( Optional ) 
Step 6:-   Add the ''Step 4 ingredients ''. and saute until the onion gets light brown in color.



Step 7:- Now bring down the flame and add 1-1 1/2  teaspoon of  kashmiri chiili powder , 1 teaspoon of turmeric powder, and  two pinches  of asafetida .


Step 8 :- Add 1/4-1/2 cup of vinegar  and mix well.


Step 9:- Add the fried chicken pieces  ( step 3) , combine well   and cook at low -medium flame for 15 minutes  until the oil separates from the ''masala ''  as in the picture.


Step 10 :- Chicken pickle is ready .......: -)  :-)  Enjoy as a side dish for steamed rice/fried rice /biriyani  ..... Store    in an airtight container , in refrigerator..... - JA- Mathew-
