Doi Maach ( Bengali Fish Curry ) RECIPE#228

 THIS RECIPE IS ADAPTED FROM  AN ARTICLE ON NDTV FOOD BY CHEF Aditya Bal !








Step 1:- Wash  the fish  ( 2-3 lb/ 1-1 1/2 kg )  thoroughly for  2-3 times , removes all  the  "scales" ,  and make a cut on its  ( ventral ) sides , remove  all  the  entrails  and the gills , wash  again thoroughly .




And cut into  3-4  pieces , 



"marinate "the fish pieces with  lemon juice  , turmeric powder and salt  keep aside 



Step 4:- Heat  a pan ( NON STICK )  .  Add 4-5   teaspoon of oil .  



Add  the "marinated  "fish  pieces ",  and fry  for  4-5 on medium flame ,  now  flip  to the other side .  and keep aside .



Step 5:-  Crush 3-4 cardamom , 3-5 cloves and a cinnamon stick  and keep aside .



Step 6:-  Splutter mustard seeds, cumin seeds and step 5 spices in the same pan ( step 4) , 






 add onion paste ( paste from a big  red/ yellow onion ) , saute until the oil separates from  the  paste 



 now add "crushed ginger and garlic" ( 2-3 table spoon ) , saute for 3-4 minutes 



 Now add 1/2- 3/4  cup of fresh curd , and turmeric powder , a bay leaf  and a 1/2 cup of water .


 add 1/4 cup of  golden or black raisins , 



 add another cup of water and  salt  allow to boil 



Step 7:-   Now add the step 4 fried fish pieces ,  1-2 table spoons of lemon juice , 1 teaspoon of palm sugar   and 3-4 green chilles ( splitted ) ,



 and cook for 20- 25 minutes on low medium flame.

Neer Dosa / Water Dosa / Thin Rice Crepes RECIPE#227

Step 1:-  Combine 2 cups of rice powder , 1/2 cup of coconut powder , salt   


and  2-3  cups of water.



and keep aside. ( the batter consistency should be"  very watery , thin and flowing "  just like that of the picture  below  ) 



Step 2:- Heat Tawa / pan  sprinkle few drops of  oil , pour  batter on the center of the pan, swirl the pan  immediately ( to spread the  batter evenly  on the surface of the pan  )  !  NOTE  MIX THE BATTER  VERY  WELL EVERY TIME,   BEFORE  MAKING THE  NEER DOSA 



Step 3:-Cook for few seconds  [ when bubbles break and edges start to dry , place a lid over it and cook for a minute on medium flame ] , and its ready !!:) 






Step 4 :- Neer Dosa / Water Dosa / Thin Rice Crepes is ready ....... Enjoy  with  curries  ........................:) JA -Mathew-

Fish Biryani ( South Kerala Style ) RECIPE#226









Steps 

I :-  MARINATE AND FRY THE FISH

II:- PREPARE MASALA 

III:- COOK  RICE 

IV:- LAYERING 

V:- FINAL BAKING  

I :-  MARINATE AND FRY THE FISH

Step 1 :-  Make a smooth  paste  with  2- 4  garlic pieces  ,2 " of ginger root, 2-3 green chillies , 1  table spoon of lemon juice ,2-3 mint leaves ,  and 1/2 teaspoon of fennel seeds   and  combine it with 


 kashmiri chilli powder, 1/4 teaspoons of turmeric powder, a teaspoon of biryani masala powder  ( http://jesacos5.blogspot.com/2013/11/biriyani-powder-garam-masala-powder.html) 2 teaspoon of onion powder ( store brought )  and salt .


Apply it on the fish pieces ( 2-3 lb / 1-1/1 2kg  ) 



 and refrigerate  it for 1/2 - 1 hours . 



shallow fry the marinated fish pieces   and 


keep aside 


II:-  HOW TO PREPARE MASALA FOR FISH BIRYANI 


Step 2 :- On the same pan add  3-4 sliced onion ( I used yellow onions ) , Saute 


until it becomes transparent , and now add a PASTE  of garlic ( 4-5 cloves ) , ginger root ( 3-4 ") and green chillies  ( 4- 5 ) , saute for 2-3 minutes  and 


 add 1 1/2 tomato ( chopped ) , saute until the tomato becomes mushy , 


Now add 2 teaspoon of Kashmiri chilli powder , 1 1/2 teaspoon of  garam masala ( http://jesacos5.blogspot.com/2013/11/biriyani-powder-garam-masala-powder.html),  2 teaspoon of biryani masala powder ( http://jesacos5.blogspot.com/2013/11/biriyani-powder-garam-masala-powder.html), salt , 1 1/2 teaspoon of fennel powder  ,1/4 cup of water  and 2 teaspoon of coriander powder . saute for 1-2 minutes 



Step 3 :Now add the  fried fish ( step 1 ) 


Add 3-4 table spoons of curd  ,  1/2 cup of water , combine well 


and cook for another 15 minutes on low medium flame , and Keep aside .




III:- COOK  RICE 

Step 4:- Cook 3 cups of BASMATI rice , until it is 70% done and keep aside .


IV:- LAYERING 

Step 5:- Spread  the 70% cooked rice  on a oven proof pan , 



 Spread  the step 3 fish masala  over the rice , 


 chopped mint leaves , chopped cilantro leaves ,  sprinkle lemon juice  ( 1-2  table spoon ) , sprinkle  few drops of rose water


 and fried onion , cashew , and raisins 


 Repeat the layers with rice being the topmost layer . Cover  the pan with a foil paper and keep aside .




V:- FINAL BAKING  

Step 5:- preheat the oven to 350 degree Fahrenheit




'  BAKE ' for 30 - 35 minutes .
