Easy Crab Rice RECIPE#259







Step 1:-  Soak rice ( basmati , 1 1/2 cup ) and keep aside . 

Step 2:- Heat a pan , add a table spoon of vegetable oil , saute  onion  ( 1/2 cup , finely chopped  )  ,  garlic  (  finely chopped , 2  teaspoon )  ,  green chilli  (  finely chopped , 2 nos ) , saute until the onion becomes transparent  and add turmeric powder ( 1/2 teaspoon )   and fenugreek powder ( a pinch of ) .


Now add crab meat ( cooked 16 oz) , combine well 


Step 3:- Now add the rice ( step 1 ) ,  



Sauté it  for 4-5 minutes , 



add pepper powder ( 1  teaspoon)  , salt .


cilantro ( 1/2 cup , finely chopped) and water ( 2 cup ) . And cook for 15-18 minutes on medium flame ( until rice becomes fluffy and well done ) .



Step 4 :- Easy Crab Rice   is ready ..... Enjoy ........JA-Mathew- :)




Kottayam Style Curry With Mahi Mahi Fish ! RECIPE#258

 Step 1 :- Cut  Mahi Mahi   ( 2 lbs/ ~ 1 kg )  into 1 1/2 inch pieces  ,  marinate  the pieces   withturmeric powder (1/2 teaspoon )  and  lemon juice ( 1 table spoon )   , for 30 - 60 minutes .







Step2 :- Heat a pan , add a table spoon of vegetable oil , splutter mustard seeds   ( 1 teaspoon)  





and add onion ( 3/4 cup , finely chopped  ) , and ginger - garlic ( 2:1 ratio, crushed ) , and  saute until onions becomes transparent ,  




Step 3 :-  Now  BRING DOWN THE HEAT  AND add kashmiri chilli powder ( 1 1/2  teaspoon ) , turmeric powder ( 1 /2  teaspoon ) coriander powder ( 3/4  teaspoon)  and fenugreek powder ( 3/4  teaspoon )  , saute until its raw smell goes away !, and



tomato ( chopped , one large ) ,


tamarind ( 1/2 of lemon sized ) OR coccum ( kudam puli ) ,


green chilli ( 2 , whole ) , curry leaves ( a twig ), salt ,  and water ( 1 1/2 cup ) , and  boil it for 15 - 18 minutes on low medium flame 



 Step 4 :-  Now  add the fish pieces ( STEP 1) , 




combine and cook for 20 minutes on low medium flame . And then add  coconut oil ( 1 tablespoon) , and remove from flame .

Easy Shepherd's Pie I RECIPE#257










Step 1 :-  Preheat oven to 400 degree Fahrenheit ~204 degree Celsius.

Step 2 :- Microwave OR cook  3 large potatoes and keep aside  

Step 3 :- Melt 2 table spoon of irish butter , 




add  onion  (  diced , a big one ) , carrots  ( diced , 4-5 medium  ) , green beans  ( chopped , 10-15 nos  ) , saute and cook for 6-8 minutes on medium flame , until the onion becomes transparent . 



now add ground meat ( beef , 2 lb ~ 1 kg  ) ,


add   pepper powder   ( 2 table spoons  ) , cardamom powder ,  ( 1 teaspoon ) , garam masala   ( 1-2 pinch ) ,and  salt   and   combine well , add 1/4 cup of water or beef broth and cook for 6-7 minutes on medium flame .



Step 4  :- Layer the step 3   mixture  in a oven proof pan, and keep aside 


Step 5  :- Melt  a  table spoon of irish butter  and add garlic ( finely chopped  2- 3  table spoons ) , saute until the garlic is  well  browned .




 add step 2 potatoes  and irish butter4-5 table spoons 




 Mash it well 


and add pepper powder ( 2 -3 teaspoons) and salt .  Combine well , 


Spread it over the step 4 mixture .




bake for 30 minutes and  broil for another 3-4 minutes

Dal ( parippu ) & Cabbage Curry RECIPE#256





Step 1:-  Pressure cook  Dal / parippu ( soaked , 1 1/2 cup  )  , cabbage ( finely chopped ,  1/2 cup )  , tomato ( chopped , one )  , onion ( chopped , one ) garlic ( finely chopped , 3 table sooons)   , kashmiri chilli powder ( 1 teaspoon )  , turmeric powder  ( 3/4 teaspoon), salt   green chillies ( 3 , whole )  , 

and water ( 1 cup ) and   keep aside .



Step 2:- Heat a pan , add a table spoon of vegetable oil , splutter mustard seeds   ( 1/2 teaspoon)  ,  cumin seeds (  1/2 teaspoon )  , dried red chilli ( 1)  ,




 and add onion ( 1/4 cup ,  finely chopped ) , and curry leaves .



Now bring down the temperature   and add kashmiri chilli powder ( 1/4   teaspoons ) , turmeric powder ( 1/2   teaspoon )  and   saute until its raw smell goes away !, and


add the step one cooked dal - cabbage  , combine and cook for 2-4 minutes .


now add coconut paste ( 1/2 cup ) , and cook for another 5 minutes on low - medium flame . 



Step 3:- Peas Curry Dal ( parippu )  & Cabbage Curry is ready...........:) Enjoy  with  steamed rice/chapattis/  doasas/ idly .............- JA Mathew-



Cauliflower 65 / Gopi 65 RECIPE#255










Step 1:-  Cut a medium sized  cauliflower into small pieces ( as in the picture)  and keep aside .





Step 2: Boil  water and add turmeric powder and   blanch them  ,






 drain  and keep aside .



Step 3:- Make a batter  with corn flour  ( 1/2 cup ) , curd ( 1/4 cup ) , rice flour( 2 table spoon )  , kashmiri  chilli powder ( 3/4 teaspoon) , lemon juice ( 2 teaspoons ) ,  ginger garlic paste ( 1 teaspoon), salt  and  garam masala  ( a pinch ) , 



coat them with the  step 3  batter 



Step 4 :- Shallow fry the coated pieces ,  3 minutes on each sides , until it gets golden brown in color .



 Step 5:- Place them on a  paper towels to absorb excess oil.



Step 6:-  Cauliflower 65 / Gopi 65 is ready......... Enjoy .......................:) JA-Mathew-
