Hyderabadi Dum Biryani RECIPE#121





Steps 

I :- PREPARE  SAFFRON MILK

II :-  MARINATE AND COOK CHICKEN

III :-COOK RICE 

IV:- LAYERING 





I :-  HOW TO 'PREPARE ' SAFFRON MILK



Soak 1 teaspoon  saffron strands in lukewarm milk  for overnight to release its color and flavor.




II :- HOW TO   MARINATE AND COOK  CHICKEN FOR DUM BIRIYANI 



                             Step 1:-  Cut 2 lb of Chicken breast into big pieces.


           Step 2:-  Make a smooth paste with 1/2 cup cilantro , 2-3 green chilies , few curry leaves, 2-3 garlic pieces, 3 '' ginger root and  few mint leaves.


                          Step 3:-  Marinate chicken pieces ( Step 1) with Step 2 Paste ,1/2 teaspoon of  turmeric powder,  1 teaspoon of chilli powder, Dum biryani powder ( 2-4 cloves, 1 cardamom, a cinnamon stick, 1/2 teaspoon of cumin seeds, 1/2 teaspoon of Shahi jeera, 1-2 javathri, 1/2 star anise)  1 teaspoon of coriander powder, 1/2 teaspoon of cumin powder, salt,  1/2 cup of curd,


  juice of half a lemon and 1/4 cup of vegetable oil.  Keep in refrigerator for 12 hours.


Step 5 :- Heat a wide non stick pan. Brush the pan with 3-4 table spoon of ghee. Cook the marinated chicken with 1/2  a cup of fried onion ( home made preferred)  for 20 minutes on medium flame . And keep aside 








III :- HOW TO ''COOK'' RICE  FOR DUM BIRYANI 



 Step 1:-  Soak 3 cups of Basmati rice for 6 hours , drain and keep aside .



 Step 2:- Place   spices [ 1 teaspoon of pepper corns, 4-5 cloves, 5-8 cardamom, 1 black cardamom,  few cinnamon sticks] on a clean cheeses cloth /muslin/cotton cloth , as in the picture.


 Step 3:-   Tie the ends of the muslin as in the picture.


 Step 4:-  Boil 5-6 cups of water with enough salt, 1 bay leaf, 1 teaspoon of Shahi jeera and the  ''tied spices'' ( step 3)


 Step 5 :-  Add the soaked rice ( step 1)   . Cook for 2-4 minutes. Strain the half cooked rice in a colander and keep aside.



                                            IV:- LAYERING 




 Step 1:- Spread  the half cooked rice ( Step 5 of how to cook rice  for Dum Biryani )  over the chicken ( step 5 of How to cook chicken for Dum Biryani)  .


 Step 2:-  Spread  some fried onion, 2-6 teaspoon of ghee,


fried cashews, fried raisins


finely chopped pineapple pieces


Saffron milk and few drops of rose water  .


 Step 3:-  Close the lid and cook on  low medium flame for 20- 30 minutes.




 Step 4:-  Hyderabadi Dum Biryani  is ready..............Enjoy.......JA Mathew- :)
