Easy Tomato Rice RECIPE#135








                                          Step 1:- Heat a wide ( non stick preferred ) pan , add  table spoon of  ghee . 


                                           Step 2:-  Splutter 1 teaspoon of mustard seeds ,  and 1 1/2 teaspoon of cumin seeds, 


                                        Step 3:-  Add    finely chopped onion ( 1/2 of a large one  ) ,  2-3 garlic cloves,  2-3  chopped green chillies  and 2'' of ginger . Saute for minutes until the onion becomes transparent. 


                                        Step 4:- Add 1 teaspoon of  Kashmiri chilli powder,  1/2 teaspoon of turmeric powder.


                         Step 5:-   Add  finely chopped tomato ( 2  small sized  tomato)


                      Step 5:-  Add a sprig of  curry leaves and  1/2 cup of water .


                                        Step 6:-  Add 2 pinch of garam masala . and cook for 10 minutes on low medium flame ,until the tomato becomes  mushy.


Step 7:- Add 1 1/2 cup of  Cooked  basmati rice .


Step 8:- Combine well

Egg- Peas Curry RECIPE#134






                                    Step 1:-  Soak 1/4  cups of split green peas or whole green peas  for 2-3 hours .


Step 2:- Drain water from the Peas . 

                                              Step 3:- Microwave the soaked peas   with 1/2 teaspoon of turmeric powder salt and  1/2-1 cup of water for 12- 15 minutes  on high power  or pressure cook the peas.. And keep aside.


                                      Step 4:-   Boil 2-3  cups of water with 3-4 teaspoon of salt ,  add  3-6 eggs  and allow  to boil in a low flame for 5- 7 minutes. Remove the shells and keep aside.


                                               Step 5 :-  Prepare tomato puree (  from  3/4 of a large tomato)  and keep aside.

                                            Step 6:- Heat 1 tablespoon of vegetable oil  in a pan . Splutter 2 teaspoon of  mustard seeds,   add 1 teaspoon of fennel seeds2-5 pieces of cinnamon sticks, 2-3 cardamom and  2-5  cloves  .Saute for few minutes.


                                            Step 7:- Add  sliced onion ( 3/4 of a large onion) , 2'' of a ginger root ( chopped)  ,4-6  Garlic cloves ( chopped) .  And  saute until the onion turns golden brown in color.


                                             Step 8 :- Add  the tomato puree ( step 5)  

Step 9:- Add  1 teaspoon of  turmeric powder.


                                        Step 10:- Add  1 1/2 teaspoon of kashmiri chilli powder, 2 teaspoon of coriander powder, 1 tea spoon of  cumin powder, and 1 teaspoon of garam masala ( home made) .


Step 11:- Add  the microwaved peas ( step 3) 


Step 12:- Add  1 cup of water  , combine well and cook for another 15 minutes on low medium flame.


Step 13:-  Now add  1/2 cup of coconut  milk powder or  1 cup of coconut milk . Combine well .


Step 14:- Add  the boiled egg ( Step 4) .


Step 15:- Egg Peas Curry  is ready..........Enjoy .......JA - Mathew



Chicken Fried Rice RECIPE#133










 Step 1:-  Soak 2 cups of Basmati rice for 30 minutes  Cook  the  soaked rice  with  1 3/4 cup of water , 2 teaspoon  of olive oil and salt and keep aside .




Step 2:-  Marinate 2-3 chicken breast with  2 teaspoon of soy sauce ,   2 teaspoon of pepper powder and salt  for  1/2 an hour. Microwave the marinated chicken breast for 20 minutes on high power, shred the cooked chicken with a fork , and keep aside .


   Step 3:- Heat a wide ( non stick preferred ) pan , add  1-2 table spoon of vegetable oil  or ghee . 


  Step 4:- Add  2-4 finely chopped garlic pieces &  2 '' of ginger root , saute for few seconds .

Step 5:- Add   2-3 chopped  carrots, 1 cup of chopped cabbage  ,  and  1/2 of a large onion( chopped), 1/2 cup of beans and  1/4 cup of green pepper  , Saute until the onion becomes transparent .


  Step 6:-   Now add 2- 3 eggs and scramble it  with the vegs  as in the picture .




 Step 7:-   Now add 3 Shredded chicken ( step 2)  .

Step 8:-  Add 2 - 2 1/2 table spoon of soy sauce .

Step 9:- Add   2-3 teaspoon of Balsamic vinegar / Distilled white vinegar  .

 Step 10:- Add   2 teaspoon of Teriyaki sauce ( OPTIONAL ). 

Step 11:- Add 2- 3 teaspoon of  black pepper powder.


 Step 12:-   ''Combine well''.


 Step 13:-   Now add Cooked rice 9 Step 1) . 'Combine well '.




Step 14:- Chicken  Fried Rice is ready.................Enjoy ..... :) :) ........-JA Mathew- 



Chicken Spaghetti -Indo- American Style -RECIPE#132







I :-Chicken Spaghetti  Indo- American Style- 


Step 1:- Thinly slice 2 chicken breasts and keep aside




Step 2:- Heat   a  pan, add sliced onion ( 1/2 of a large onion) ,Saute until the onion gets transparent .




Step 2:-  Add the sliced chicken breast ( step 1) .


Step 3:-  Add  2 teaspoon of pepper powder and 1 teaspoon of turmeric powder. Combine well.


Step 4:-  Add   1/2 teaspoon of garam masala and 1 teaspoon of cumin powder. Saute for 2-4 minutes 


Step 5:-  Add    1/2 cup of chopped celery and green pepper.


Step 6:-  Add   1/2 cup of sliced carrot .


Step 7:-   Mix well and add  1/2 more  teaspoon of pepper powder if  needed , and cook for 20 minutes on low medium flame. And keep aside






II:- Spagatti 



                                 Step 8:-   Boil 3-5 cups of water with salt.

 

 Step 9:-   Add Wheat Spaghetti  and boil for 8-10 minutes ,until the Spaghetti becomes soft.




 Step 10:-  Immediately drain in colander .





Step 11 :- Chicken  Spaghetti -Indo- American Style - is ready.................. Enjoy......:) :)  - JA- Mathew-
