Lemon Pound Cake RECIPE#175

Recipe Courtesy :-   Mrs. Kathy Boynton  and  Mr.Food TEST KITCHEN 








Step 1:-   Preheat the oven to 350 Degree Fahrenheit . 




Step 2:- Grease and flour  9 1/2  inch bundt cake  pan and keep aside .




Step 3:- Squeeze a lemon and keep aside .





Step 4:- Sift 3 cups of whole purpose flour, 2 teaspoons of baking powder and 1/2 teaspoon of baking soda  and keep aside  .






Step 5:-   Melt 2 sticks of butter in a mixing bowl .





Step 6:-   Add 2 cups of sugar 






"beat" well with a hand mixer, until it becomes creamy 





Step 7:-   Now add 3 eggs and 2 teaspoons of vanilla extract . 



Mix well.




Step 8:-   Now gradually add the  step 4 flour and  




a cup of low fat vanilla yogurt  and beat well until well mixed 





Step 9:-   Now 4 teaspoon of lemon juice ( step 3)  , 


 and zest of a lemon , stir well.



Step 10:-  Pour 'the batter ' into Step 2   pan ,




Step 11:- Bake for 55 - 60 minutes ,




 until a '' wooden toothpick '' inserted into the center of the cake comes out clean.





Step 13 :- Lemon Pound Cake  is ready...... :)   enjoy.....:) ............JA- Mathew-

"JESS STYLE" Brinjal -Tomato Masala RECIPE#174







Step 1:-  Cut a medium sized  violet brinjal into small  cube pieces ( as in the picture)  and keep aside .





Step 2:- Make a paste with whole purpose flour  ( 1/3 cup )  and water   ( 1/2 cup  ) and keep aside.





Step 3:- Heat a pan , add 1 table spoon of vegetable oil ( canola) , and splutter 1 teaspoon of mustard seeds  , 1 1/2  teaspoon of fennel seeds   and  1 teaspoon of cumin seeds 





Now add  finely chopped  onion ( 1 1/2 ) ,Saute for 2-3 minutes on medium flame ,  



  garlic cloves( 4 ) ,  ginger ( 3")  and greenchillies ( 2-3 splitted )   ,    and saute until the onion becomes'' transparent ''.



Step 5:-Bring down the heat  and add 1 teaspoon of turmeric powder, 1 teaspoon of Kashmiri chili powder  and 1 1/2  teaspoon of coriander powder  . combine well and 




add a chopped tomato ,




and combine well.




Step 6:- Add water 2 1/2 cup ), garam masala ( 2 pinches) ,salt  and finely chopped cilantro (   1/2 a cup  ).Allow to boil.


Step 7:- Add the step 1 chopped Brinjal pieces ,


combine well,  



add  2 cups of water  ,1/2 a teaspoon of cardamom powder  .And cook for 20 minutes on low -medium flame.




 Step 8:- Add the step 2 ''paste '' , combine , cook for another 5-10 minutes on low flame until ''the curry'' becomes thick .


Step 9:-  "JESS STYLE " Brinjal -Tomato Masala'' is ready  -....Enjoy with steamed rice /chapattis/tortillas /fulkas ........JA-Mathew- :)

EASY JES STYLE Pork Ularthiyathu RECIPE#173







Step 1:-  Combine 2 .30 lb/ 1 1/4 kg of pork , 1 1/2 teaspoon of kashmiri chilli powder , 1 teaspoon of turmeric powder , 1 teaspoon of cardamon powder , 2 teaspoon of coriander powder and few curry leaves and keep aside .





Step 2:- Heat a pan , add 4 table spoon of vegetable oil ( canola) ,add  finely chopped  onion ( 1 1/2 )  Saute for 4-5 minutes on medium flame , until  the onion becomes transparent . 




Now add   garlic cloves( 4 ) ,  ginger ( 3")  and 3 green chillies ( splitted )  .




Now add the pork pieces (Step1)  .


Combine well and keep for minimum 2 hours at room temperature  




Step 3:- Add  3-4 cloves and  1-2 cinnamon sticks, 


water 2  cups ) , 1 teaspoon of garam masala and salt  .And cook for 45  minutes on medium flame. 


Once the pork pieces  are done remove the lid and saute until the water completely evaporates .



Now add 1/2  cup of finely chopped cilantro , combine , ''saute '' for another 4-5  minutes on low flame 



Step 4:-  EASY JES STYLE  Pork Ularthiyathu  is ready  -....Enjoy with steamed rice /chapattis/tortillas /fulkas ........JA-Mathew- :)
