Summer Special ( Jess Style ) Watermelon Juice RECIPE#199








 Step 1:- Chop 1/2 of a  medium sized watermelon  ( remove the skin and its white part ) and refrigerate  for 2-3 hours .

 Step 2:-  Add the  watermelon ,  3 teaspoons of dark brown cane sugar and a pinch of javentri ( mace ) powder  to a  juicer jar . Blend Well .

Puri / Unleavened Indian Wheat Bread / Poori RECIPE#198










 Step 1:- Combine 2 1/2 cups of atta /wheat flour  , salt and water ( ~  1 1/2 cup ) . Knead well until  you get a soft dough. And  Make small "balls" out of the dough , 


and apply oil on its  ( ball dough's  ) surface  , roll  ( DO NOT DUST with  FLOUR  while spreading ) it out  in to a small round shape  as in the picture .  And keep aside .


Heat a pan and add 2-3 cups of  vegetable oil and heat the  oil { FOR MAKING THE  PURI THE OIL SHOULD BE VERY HOT , 


TO TEST THIS  ( WHETHER THE OIL IS HOT  ENOUGH ) drop a small piece of dough into the oil if the dough sizzles and comes up to the surface immediately, the oil is   hot  enough ( ready ) to make the  puri } . 



Now drop the 'Spreaded " dough ( step 1) ,


when the dough comes to the surface,  pat its  surface  with a thava  as in the picture (  this helps the puri to puff up evenly ) ,


turn it to the other side , fry until the 'puri " gets golden  brown in color . 




Place it immediately on a paper towel ( to absorb the  extra oil from the puri  )  .

Red Hot Coconut Chutney RECIPE#197






Step 1:- Make a smooth paste with  1 1/2 cup of  grated coconut , 2-3  red dried  chillies3 ''  of ginger root ,  salt ,  tamarind ( a small lemon sized ) , 7-9 pearl onions , few curry leaves,  and  1 teaspoon of Kashmiri chili powder . 



And keep aside .


Step 2:-  Heat 2 table spoon of vegetable  oil in a pan , Splutter 1 teaspoon of mustard seeds and 1 teaspoon of urud dal .



Add  2-3 dried red chillies, 3-4  finely  chopped pearl onions ,  few curry leaves . 


 And saute for few minutes, until the onion gets brown in color .



Step 2:-  Add the   smooth paste ( Step 1) and  1/4 cup of  water .



Mix well and 'cook' at low flame for 5-6  minutes.




Step 3:- Red Hot  Coconut chutney is ready .....Enjoy with Dosa, Masala dosa, Idly.......

Special ( Jes Style ) Beetroot Stir Fry RECIPE#196







Step 1:- Wash   , ''peel''  and 'cube cut ' 3  medium sized beet roots  .  And keep aside.






Step 2:-   Heat  a pan , add 1/4 cup of   vegetable oil , splutter 1 -2 teaspoon of mustard seeds, 2 teaspoon of   of  cumin seeds  ,



2 1/2  of a  onion ( cube cut ) , saute until the onion becomes transparent .


 Now add  the beet ( step 1),  3-4 green chillies ( splitted ),  salt , curry leaves ( 2 twigs )  and 1 teaspoon of turmeric powder  , 1 teaspoon of fenugreek powder  and 2 pinches of asafetida . 



 Saute for 2-3 minutes and add crushed ginger root  ( 3") , crushed garlic cloves ( 3-4 nos)  3-4 table spoon of  water  and cook  for 15 -17 minutes on low medium flame. 





Now 'sprinkle' 2 teaspoons of black pepper powder ,   1 teaspoon of garam masala  [ http://jesacos5.blogspot.com/2013/11/biriyani-powder-garam-masala-powder.html ]and combine well and cook for another 2-3 minutes  .


Now remove the lid ,  and saute  until the  water  has completely evaporated . 


Step 3:- Special  ( Jes Style ) Beetroot Stir Fry  is ready ....Enjoy as a side dish for  steamed rice /chapattis/tortillas /fulkas ........JA-Mathew- :)  


Easy Fish Patties With Leftover Potato Thoran RECIPE#195







Step 1:-  Microwave fish pieces ( 3 nos)  with 1/2 teaspoon of kashmiri chilli powder , 1/2 teaspoon of turmeric powder ,salt , 1/4 cup of water and 1/2 teaspoon of fenugreek powder  .

Drain the water , and keep aside .


                                Step 2:-  Mix the cooked fish with  leftover potato thoran     ( step 1)        


 Step 2:-  Make  small round/oval patties using hand, 


and dip in egg white / '' beaten whole egg'' OR in "whole purpose  flour 'watery'  paste" and then in bread crumbs. And Keep aside .





 Step 3 :- Heat  a pan on stovetop and then add oil and then heat the oil. 



Shallow fry the patties, flip them  to the other side  . ( Until it gets golden brown in color) .




 Step 4:-  Place on paper towels to absorb excess oil.

    


 Step 5:-  Easy Fish Patties With Leftover Potato Thoran is ready ....... Enjoy  with your favorite sauce.  ........................:) JA -Mathew-

Beet Root Thoran ( Kerala Style ) RECIPE#194






Step 1:- Wash   , ''peel''  and grate 3  medium sized beet roots  .  And keep aside.



Step 2:- Heat a pan , add 1 table spoon of vegetable oil ( canola) , and splutter 2 teaspoon of mustard seeds 


add  onion (  1 1/2  chopped yellow/white ) ,  garlic cloves (4-5 chopped),  3-5   green chillies  ( splitted ) ,






2 twigs of curry leaves  saute for 4 -5 minutes on medium flame , until the onion becomes transparent .




Now add the grated beet root  ( step 1)  ,  1 1/2 teaspoon of turmeric powder, 2 teaspoon of cumin powder   , salt , 


1 1/2 cup of grated coconut  and 1 teaspoon of cumin seeds   . Cook on medium flame for 10 - 15 minutes on low medium flame [ WITH OUT WATER ].


Now 'sprinkle' 2 teaspoons of black pepper powder , combine well and cook for another 2-3 minutes  until the  water  has completely evaporated . 


Step 3:- Beet Root Thoran ( Kerala Style ) is ready ....Enjoy as a side dish for  steamed rice /chapattis/tortillas /fulkas ........JA-Mathew- :)
