Jes Special Egg Kurma RECIPE#241







Step 1:-  DRY ROAST   cumin seeds  ( 1/4 teaspoon) , fennel seeds ( 1/2 teaspoons ) , bay leaves ( 1-2 )  , cinnamon sticks  ( 2-3 small ) , black pepper corns ( 10-15 ) , 




and add onion ( a big one - chopped - ) , ginger garlic paste ( 2-3 teaspoons) , saute until onion becomes transparent,  


 add green chillies ( 2-3 ) 



curry leaves ( 10-15 )  and cilantro (chopped -  1/4 cup ) , 


tomato ( chopped -2  nos ) , saute until the tomato becomes mushy .





Step 2:-  Grind   (Step 1 ) to a fine paste , and keep aside .






Step 3:-  
Heat  a pan   and  add oil ( 2-3 table spoons )   and add kashmiri chilli powder ( 1 1/4 teaspoons ) , turmeric powder ( 1  teaspoon ) coriander powder ( 2 teaspoons)  . 


Add the  step 2 paste , 


saute until the oil  separates from the paste  .



Step 4:- Now add   fried cashew (  1/4 cup ) and raisins ( 1/4 cup ) ,



and add boiled eggs( 5-8 ) 



Step 5:- Now add  coconut milk ( 1/2 - 1 cup )  . Cook for 10 minutes on low flame



Step 6 :-  Jes Special Egg Kurma  is ready ..... Enjoy as a side dish for   Steamed rice/  chapattis/ fulkas/Tortillas    ........JA-Mathew- :)
