" SPICY TASTY NADAN " Boneless Chicken thighs Fry !! RECIPE #272





Step 1:- Soak  boneless chicken thighs    ( 2 lbs~ 1 kg  )  , in salt water ( 3 ~1 , 3 table spoons of salt in 1 liter of water) for 20- 30 minutes .


Step 2:- Grind   curry leaves   ( 1-2 twigs  )  cardamom  (5-6 nos) , green chilies  ( 2-3nos ) ,  and fennel seeds( 1/2 teaspoon)  and keep aside .


Step 3:- Make a marinade with step 2 paste ,   kashmiri chilli powder   ( 1 1/2 teaspoons  )  turmeric  (1 teaspoons ) , onion powder  ( 2 teaspoons  ),  black pepper powder ( 1/2 teaspoons) , ginger-garlic powder ( 3/4 teaspoons) salt  ,



and  water ( 1-3 table spoons ) . 


Apply it on Step 1 Boneless Chicken thighs    and refrigerate it for 30 minutes - 4 hours  .



Step 4:- Heat a pan and add oil ( any vegetable oil, 1-1 1/2 cup ) and heat the oil , and fry the  step 3  chicken thighs , on both sides until it gets golden brown in color  ,



and drain them on a paper towel . And keep aside .


Step 5:-  Remove most of the  oil [  90% of fried oil from the   step 5 pan and keep aside for future use ( :)  ]  and retain little oil ( 10% of it )  and   splutter  mustard seeds ( 1 teaspoon ) , fennel seeds ( 3/4 teaspoon), 




and add  curry leaves  ( a twig ) , green chillies  ( 2-4 nos, as whole  )  , garlic  ( 3-4 nos ,  crushed , with its cover ) , and ginger (  crushed ,2 " piece ) , 



and add Kashmiri chili  powder ( 1 teaspoon ) roast it until its raw smell goes away .


Step 6:-  Dry roast step 4 chicken ,until it gets well coated and  gets dry  .

Spicy Carrot Stir Fry RECIPE#273









Step 1:-  Heat a pan  , add oil ( 1 table spoon)   and   splutter  mustard seeds ( 1 1/2 teaspoon ) , fennel seeds ( 1/2 teaspoon), 



 kashmiri chilli powder   ( 3/4 teaspoons  )  turmeric  (3/4 teaspoons ) , onion powder  ( 1 1/2 teaspoons  ),   ginger-garlic powder ( 3/4 teaspoons)  , saute until its raw smells goes away .



Step 2:- Now add carrot ( 3 cups, sliced as the picture below )  ,




 add green chillies  ( 2-3 nos, splitted  )  salt , water ( 2-3 table spoons )and  curry leaves ( 1 twig ).


Combine well and cook for 12 -15 minutes and now  remove the lid , add oil  ( 1/2 teaspoon , add more if needed ), and sauté  in between  ( another 4-5 minutes )  until the carrot becomes  "soft and dry" .


Step 3:- Spicy Carrot Stir Fry  is ready ....Enjoy as a side dish for  steamed rice /chapattis/tortillas /fulkas ........JA-Mathew- :)

Hey guys follow me here 



Step 1:- Soak chicken drumsticks    ( 5-7 nos )  , in salt water ( 3 ~1 , 3 table spoons of salt in 1 liter of water) for 20- 30 minutes .



Step 2:- Grind   curry leaves   ( 1-2 twigs  )  garlic  (5-6 nos) , ginger ( few pieces as in the picture below ) , black pepper corns ( 20-25 nos )   and fennel seeds( 1/2 teaspoon)  and keep aside .



Step 3:- Make a marinade with step 2 paste ,   kashmiri chilli powder   ( 1 1/2 teaspoons  )  turmeric  (1 teaspoons ) , onion powder  ( 2 teaspoons  ), salt  and  water ( 1-3 table spoons ) .  



Apply it on Step 1 chicken drumsticks   and refrigerate it for 30 minutes - 4 hours  .



Step 4:- Preheat the oven for 325 Fahrenheit ~ 163 degree Celsius, 



and bake it for 25 minutes ,



and keep aside .

"EASY TASTY" Pasta sauce ! RECIPE #270





Step 1:- Heat   a pan  add  oil   ( olive oil , 2 table spoons )  ,



add onion  ( 1/2 cup , chopped )  garlic  (chopped, 1 1/2  table spoon) ,  and sauté until the onions become golden brown  in color .



now  add  ginger powder ( 3/4 teaspoon) kashmiri chilli  powder ( 1 teaspoon) , and saute until its raw smell goes away .






Step 2:- Add tomato   ( 3 large  nos , chopped  )  , sautee for 3-4 minuets , 


 add  water  ( 3/4  - 1 cup ) ,  pepper powder ( 1 teaspoon) ,  salt and  thyme ( 1/4 teaspoon) .




 add  tomato basil sauce  OR tomato sauce  ( 1/4  cup ) ,







 Now add  pasta ( 1 lbs , cooked ) ,  



and combine .
