Sughiyan ( A Sweet , Kerala's Snack made with Green Gram/Moondal/Cherupayar+ Coconut + Jaggery + Cardamom ) from Jes's Kitchen ! RECIPE #321






Step 1 :- Soak Green bean / Moon dal / Cheru payarhttps://en.wikipedia.org/wiki/Mung_bean ]  ( 1 1 /2 cups , 4-8 hours )  and cook them by adding water ( 1/2 cup )  and salt ( one pinch )  [ if you use instant pot , use settings - Manual , 18 minutes on high ] . and keep aside 






Step 2:-    Make a  'medium thick' smooth batter with whole purpose flour  ( 1 1/2 cup ) , turmeric powder  ( 2 pinches ) salt ,  water ( 14- 1/2 cup ) , and sugar  ( 1 table spoons )  and set aside .




Step 3:-    Prepare jaggery / sarkkara https://en.wikipedia.org/wiki/Jaggery syrup /paani   { by combining  jaggery ( 3/4- 1 lb ~ 1/2 kg )  and water ( 1/4 cup )  and then bring it to  boil , and then allow to cool , now all its impurities make a layer on its top ,  as a pale white color ( as in the pic 2), remove the 'pale color layer'  by a spoon / spatula  }  , then strain the syrup  on a big pan ( as in the pic 3 below ) .     
Now  heat the pan and add coconut  ( freshly grated or frozen ,  1 1/2  cups ) ,  and  saute it  until ,


its water content completely  evaporates  ( as in the pic 1 below ) ,  Now add  Step 1 cooked Green gram , Combine and add cardamom ( 2  1/2 teaspoons)  and salt  ( a pinch ) as in the pic 4 below   .   Combine   and saute the mixture  ,  until all its 'water content' evaporate . And  then allow to cool it .





Step 4:-    Take  a scoop out of it ,  and 


shape  it (  into a smooth  ball)  with  our hands , as in the pic below . And keep aside . 





Step 5:-    Heat  another   pan ,  add oil  ( any vegetable oil ,  1  1/2 cups )  , and heat oil . 

                Now dip the step 4 balls on  step 2 batter ( make sure all its sides are coated  well ) ,  and place them on oil  ( hot oil ) ,  and fry it ( it will take  40 sec - 1  minute ,  each side ) . Now place  the ' Sughiyan on a paper towel to absorb its  extra oil .

'Jes Special 'Baked Tilapia from Jes's Kitchen ! RECIPE #320








Step 1:- Preheat Oven to 375 degree F  .



Step 2:- Wash ,  and clean   "  tilapia     " (one box ~ 2.2 lb   ) and cut  along its center  and  set aside ( on an Oven  proof pan ) .





Step 3:-    In a Mixing bowl , combine turmeric powder  ( 3/4  teaspoons ) , ginger garlic powder   (  2 teaspoons   ) , smoked paprika   (  1 1/2 tea spoons )  ,onion  powder  ( 1 1/2 teaspoons ), salt   lemon juice   ( from 1/2  of a lemon )  ,soy sauce ( light , 1/3 cup  )  ,   



pepper powder  ( 3/4 teaspoon ), and 


oil  (  Olive oil,   3 table spoons  ),well and  




apply it on step 3  tilapia  pieces ,  and place few curry leaves over them  and refrigerate for 20- 30 minutes .




Cover the pan with  a heavy duty aluminium foil and bake for   28-35  minutes .

UPMA ( semolina + veggies + ghee ) and Masala Chicken Curry from Jes's Kitchen ! RECIPE #319

Step 1:- Boil    Water  ( 3 3 /4 cups   )   and add  salt (3 teaspoons)  , and  set aside .



Step 2:-   Cut vegetable [ I used carrot ( into small squares,  1/2 cup) , cabbage ( into small squares,/2 cup) , onion (into small squares,3/4 cup ) ,  red and orange peppers( into small squares,1/2 cup ) , ginger ( finely chopped , 2 table spoons ) , green chillies  (  finely chopped , 1 table spoon ) ,curry leaves  (  finely chopped , 2 table spoons )   and keep aside . 


Step 3:- Heat a pan and add oil (ghee  , 3 table spoons)  



and splutter   , mustard seeds ( 1 1 /2 teaspoons ) ,  urud dal   (  1  1/2 teaspoons  ) , and  toor dal   (  1 teaspoons  )



 now add step 2 onion , cabbage and carrot , saute for 3-4 minutes and add 




step 2 ginger  , green chillies  and  curry leaves ,  saute until the onion becomes transparent and now add 


step 2 peppers , saute for 2-3 minutes and add 


SEMOLINA ( 1 1/2 cups) ,




combine and saute until the semolina  gets golden brown ( add more ghee if needed ) in color  .



Step 4:-  Now add step 1 boiled  water slowly ,



and combine at the same time .



Step 5:-  UPMA ( semolina + veggies + ghee )  from Jes's Kitchen is ready .... Okra Stir Fry from Jes's Kitchen ! RECIPE #318









Step 1:- Wash ,  and clean  and cut  "  okra/ladies finger    " (18 oz~1.12 lbs~0.5 kg   )  into  lengh wise ( 3'' length )  and  set aside .




Step 2:- Heat a pan and add oil (any vegetable oil , 2 table spoons)  and splutter   , mustard seeds ( 1 1 /2 teaspoons ) , and  cumin seeds  (  1 teaspoons  ) , 




and  add  turmeric powder   (  3/4  teaspoon  ), saute and 



and  step 1 okra  , combine and add 


onion ( red , one ,  medium sized  ,sliced   ) , green chillies ( 2-3  nos ,  slitted   ) and   curry leaves  (  2 twigs ) ,   combine and close its lid and 



cook for 15-17 minutes on medium flame. Now open the lid  and add oil  ( 1/2 teaspoon , add more if needed ), and sauté  in between  ( another 4-5 minutes )  until the okra  becomes  "soft and dry" .




Step 3:-  Okra Stir Fry  from Jes's Kitchen is ready ....Enjoy as a side dish for  steamed rice /chapattis/tortillas /fulkas ........JA-Mathew- :)

Instant Pot, Jes Special , Easy , Masala Chicken Curry ! RECIPE #317






KINDLY READ INSTANT POT'S  USER  MANUEL BEFORE  ITS OPERATION !!


Step 1:- Wash ,  and clean  "  chicken thighs  "( 1 1/2 lb~ 3/4  kg ) and set aside .

Step 2:- Make a marinade with  lemon juice  ( from 1/2 of a lemon  ) , ginger garlic powder  ( 1  1/2 teaspoons) , turmeric powder ( 1 teaspoons ) , salt , and  curd ( 1/2 cup ) , 



combine ( all of them )  thoroughly and  apply 




it on step 1 chicken  pieces  and refrigerate  for 2 hours to overnight .



Step 3:-  Select  the  Saute option   , and once  the pot is preheated , splutter   , mustard seeds ( 1 1 /2 teaspoons ) , and add cloves ( 5-8 nos ) ,  pepper corns ( 8-10 nos ) , cardamom (4-6 nos ) , cinnamon ( 1 medium sized stick ) , and  fennel seeds ( 3/4 teaspoon).




Now add  onion ( red , 2 medium sized  ,sliced   ) green chillies ( 3-5 nos ,  as such  )  ginger (  julienned  , 4" of a root ), garlic (  julienned  , 4-6  cloves  ) , curry leaves  (  2 twigs ) and  saute until onion becomes transparent , 




now add tomato ( one , chopped )  and saute for 1-2 minutes , 




and  now add   , kashmiri chilli powder ( 1 teaspoons)  , coriander powder  ( 2 1/2   teaspoons ) ,  saute for 1 minute, 



and  now add  step 2 marinated  chicken ,  saute for 3-4  minutes ( until 



water from chicken comes out , as in the pic below ) , now 



 add water ( 1/2 cup )   , and 



 add fried onion ( 3/4  cup )   , and combine and close its lid , 




and  cook for 12 minutes on  high on MANUAL SETTING . 


 open its lid by NPR  and  turn  it  AGAIN to SAUTE MODE


and  "cook' for another 5 minutes On SAUTE MODE





Step 4 :- Instant Pot, Jes Special , Easy ,  Masala Chicken Curry  is ready .......: -) it goes well with   with  steamed rice/ Chapathi/ paratha/Tortilla ..... Enjoy :) J A  Mathew .
