Spicy , Whole Fish Fry Recipe II From Jes's Kitchen ! RECIPE: 345



Hey guys follow me here 





STEP 1:-Wash the fish  ( I used 8 " ~ 20 cm sized , 2, red Tilapia )  thoroughly for  2-3 times , removes all  the  "scales"  ( if any ) ,  and make 5-7  cuts on the fish ( as in the pic below )  , and  set aside  .





STEP 2:- Combine  onion powder ( 2 teaspoons )  , turmeric powder  ( 1 teaspoons ) , chili powder ( 1 teaspoon )  , pepper powder ( 3/4 teaspoon), paprika  ( 1 teaspoon ),   ginger - garlic powder   ( 1/2 teaspoon) , salt ,



and lemon juice ( from half of a lemon )  , in a mixing bowl  .




STEP 3:- Apply evenly the  STEP 2 marinade on the STEP 1 fish . And refrigerate for minimum 20 minutes .


STEP 4:- Preheat oven for 300 degree Fahrenheit/ ~149 degree Celsius . Transfer  STEP 3 fish into a oven proof pan and bake for 30 minutes .



STEP 5:- Now heat a pan and add few drops of oil ,  and  "fry ' 


the baked fish (  on medium flame , until  golden brown on both sides -about 4  -5 minutes a side   ) 


STEP 6:- Now add curry leaves ( a lot , if you have )  :) !! . NOW TURN OFF THE FLAME AND CLOSE THE PAN WITH A LID AND ALLOW TO REST  IT FOR MINIMUM 5 MINUTES :) !

Al Carbon Pollos Asados 'INSPIRED' Chicken From Jes's Kitchen ! RECIPE: 344





Hey guys follow me here 





STEP 1 :-  Wash & Cut chicken thighs   ( 2 lb~ 1 kg ) 




into   halves  , and soak them in  salt water ( 1 cup water : 1 . 5 teaspoons salt )  for 20 minutes . Drain , and rinse with water and pat dry  with a paper towel and   set aside  .




STEP 2 :-  In a mixing bowl combine paprika  ( 1 .5 teaspoons ) , onion powder  ( 2 teaspoons ) , garlic powder ( 1 teaspoon)  , saltpepper powder ( 1 .5 teaspoons  )  ,  cumin powder ( 1.5 teaspoons ),  




  lemon juice ( from 1/2 lemon ) , 



 orange juice ( from 1/2 of an orange ) 




 olive oil ( 4 table spoons ), WELL and 'apply' it on 


   STEP1 chicken pieces , combine  well and 




   refrigerate  for minimum 20 minutes .

  STEP 3  :- Preheat the oven for 375 Degree Fahrenheit  ~190 Degree Celsius .

 STEP 4 :- And bake for 30 minuets .




STEP 5  :-  Change the oven settings to BROIL . Arrange the baked chicken pieces  on a cookies sheet ( as in the pic below )  and  save the ' juice ' for 'future ' use. 



STEP 6 :-  Broil for 7 minutes ( on both side ) 



STEP 7 :-  BRUSH the STEP 5 juice on 




the broiled STEP 6  chicken pieces . AND ENJOY  :)

Easy , Tasty "Spanish Rice with Indian Basmati Rice " From Jes's Kitchen ! RECIPE: 343







Hey guys follow me here 










STEP 1 :-  Wash Basmati rice ( 2 cups )  , 2-3 times and set aside .




STEP 2 :-  Heat a pan and add butter ( 1/4 cup ) , and add 



 onion ( 1/2 of a big red one , finely chopped ) , saute ( 4-5 minutes, until the onion becomes transparent ) ,  



now add garlic  ( finely chopped , 5- 8 cloves ) ,saute for another 1-2 minutes .



 Now add the STEP 1 rice



and  saute for 3-4 minutes ( until the rice separates, and   becomes slightly brown in color ) .



STEP 3 :-  Now add tomato paste OR tomato puree ( 1/2 -3/4  cup ) , 



, paprika ( 1 1/2  teaspoons) , cumin powder ( 1  1/2  teaspoons) , salt ,



, chicken broth OR beef broth  ( 32 oz ~ 4 cups ) , 


COMBINE and 



, add cilantro ( chopped , 1 cup ) , 




 and  lemon juice ( from 1/2 of a lemon ) .




STEP 4 :-  Close the pan with a lid  and cook on low- medium flame for 12-15 minutes ( until the the rice is well done )   . ADD MORE WATER IF NECESSARY !!





STEP 6 :-   Fluff with a fork :)

Mexican Style 'Green Sauce' (1) with Avocado From Jes's Kitchen ! RECIPE: 341






Hey guys follow me here 








STEP 1:-Steam   onion ( yellow  OR white , 1/4 of a big one)   , jalapeño ( one , and deseeded  ) ,   and garlic  ( 3 nos  ) and set aside  .

STEP 2:- Blend the steamed 'vegs ' ( STEP 1 ) , with an avocado ,








 olive oil ( 3 table spoons ) , cilantro ( 1/2 cup , chopped ) , salt , 




 and  lemon juice ( from 1/2 of a lemon )  well in a blender/ food processor  .



STEP 3 :- Mexican Style 'Green Sauce' (  1 )with Avocado  from Jes Kitchen is ready .......: -) Enjoy with  Mexican rice/  broiled chicken/ baked chicken..... .....  .... Enjoy :) J A  Mathew .  



Kerala Style Spicy Fish ( with its head :) ) Curry From Jes's Kitchen ! RECIPE: 342





Hey guys follow me here 





STEP 1:-Wash the fish  ( I used 8 " ~ 20 cm sized , 2 , red Tilapia )  thoroughly for  2-3 times , removes all  the  "scales"  ( if any ) , 



 and cut it into small pieces ( as in the pic below ) .




 'Rub'  all over its  surfaces with lemon juice ( juice from one )  and turmeric powder  ( 1 teaspoon ) and set aside .








STEP 2:- Heat a pan and add Coconut oil ( 3 tablespoons ) , and splutter mustard seeds ( 1 teaspoon) and red dried chillies ( 4-5 nos ) , and 




now add onion ( finely chopped , 1/4 of a big red  one ) , saute for 4-5 minutes ( until it looks soft ) , 





 and add ginger garlic paste ( 3 teaspoons ) , saute for 1-2 minutes , 


 and add curry leaves  ( from 2 twigs ) and green chillies ( 3-4 nos , as such ) .



Now  BRING DOWN THE FLAME and add Kashmiri chili powder ( 2 1/2  teaspoons) , turmeric powder ( 3/4 teaspoon) , coriander powder ( 1 teaspoon) , water ( 2 table spoons)  and fenugreek powder ( 3/4 teaspoon) , saute for 2-3 minutes ( until the raw smell of the powders goes by )  , 



 Now add tomato ( 2 chopped ) ,  tamarind (half of a lemon sized )  and 



water ( warm, 2 cups)  and salt  and BOIL it .


STEP 3:- Now add the STEP 1 fish pieces , swirl the pan   to combine well   , and  close the pan with a lid and cook , 



 for 45 minutes ( on medium flame ) , 



 Now open its lid and add more water if necessary  and cook for 



another 15 minutes on low medium flame .




STEP 4:- Now turn off the flame and  sprinkle coconut oil ( 2 -3 table spoons ) .
