Vermicelli Payasam RECIPE #22

Step 1 - Fry 2-3 Table spoon of raisins, 4-5 table spoon of cashew nuts, and 2-3 table spoon of chopped almonds in Ghee and keep aside.
Step 2- Cook the 1/4 cup  Sabudana until it gets transparent. and keep aside
Step 3- Roast 2 cup of vermicelli in 1 teaspoon of ghee in a heavy bottomed pan until the vermicelli turns to brown in color and keep aside. Or use roasted Vermicelli.
Step 4- In the same pan (which  we  used for frying the  vermicelli) , add 5 cups of whole milk ,1- 1 1/2  cup of sugar and allow it to boil,
Step 5:- Bring down the heat  and add the fried vermicelli and Sabudana ( from step 2 ).Continuously stir for 10- 12 minutes in  medium heat until it looks  thick and creamy. Add 1-3 pinch of cardamom powder, and  fried nuts( from step 1).Add more milk if needed..........
