Egg Puffs ( Kerala Style ) RECIPE #67




Step 1:- Finely  chop  a medium sized onion,  3 '' of  ginger  root & 2 garlic cloves,  1- 1 1/2 green chilies ,  1/4 cup of  cilantro   and keep aside. 

Boil   4-6 Eggs . Remove the shells from the boiled eggs and keep aside.



Step 2:-   Heat 2 tablespoon of oil in pan , splutter teaspoon of mustard seeds, and add chopped onion , Saute for few minutes.



Step 3:- Add the  ginger, garlic and cilantro


Step 4:- Saute until the onion gets brown in color.


Step 5:- Bring down the heat  and add 1/2 teaspoon of turmeric powder ,  1  teaspoon of  kashmiri chilli powder, 1 1/2 teaspoon of garam masala  (  http://jesacos5.blogspot.com/2013/11/biriyani-powder-garam-masala-powder.html ),  and salt .Saute for few seconds.


Step 6:- And add  half  of a tomato ( chopped) .


Step 7:- Add 1/4 cup of water and cook for  1-2 minutes ,until the tomato becomes mushy. And keep aside .

  Preheat the oven to 400 degree Fahrenheit 


Step 9:- Cut the pastry sheets into square or rectangle , and place the onion-tomato mixture ( step 7) on one half of the sheet.



Step 10:-  Place a half of the egg over the'' mixture''  as in the picture.


Step 11:- Fold and press the  sides to seal , and  brush the top with egg white.


Step 12:- Bake for 20-25 minutes.


Step 13:-  Until ''the puff ''looks brown and fluffy.


Step 14:- Remove from ''cookie sheet'' and place in a  cooling rack for 5-10 minutes .


Step 15:- Egg puff ready....................:)

Mini Plantain Fry ( Ethakkaappam) RECIPE #66

Mini Plantain  fry ( Ethakkaappam)







Step 1:- Cut  2 ripe  plantain   into  pieces as in the picture  .




Step 2:-  Prepare a medium thick batter with  1 1/2 cup of whole purpose flour , 1 teaspoon of turmeric powder, 2 teaspoon of sugar, 2 teaspoon of cumin seeds, water and salt .



Step 3:- Dip the Plantain pieces into the batter.


  Step 4:- Heat pan on stovetop and then add oil and then heat the oil. Shallow fry the ''Dipped Plantain pieces '' ( Until it gets golden yellow in color) .



 Step 5:- Drain the '' golden yellow Plantain pieces ''on paper towels to absorb excess oil.


Step 6:- Sprinkle with candied cumins/ fennel seeds  ......  Enjoy ....:)

Easy Beef Curry ( kottyam style ) RECIPE #65

 "Easy"Beef Curry ( kottyam style )






    Step 1:- Chop  2 lb of Beef  into  small cubes.


Step 2:- Add 2 teaspoon of Turmeric powder , 2 teaspoon of Kashmiri chilli powder, 1 teaspoon of pepper powder , 2 1/2 teaspoon of coriander powder and 2 1/2 teaspoon of garam masala powder into  the beef pieces.


Mix well .


Step 3:-  Add Crushed ginger root  ( 5 inch ) and  garlic cloves ( 4-7) and few curry leaves.


Step 4:- Mix well and keep it for 2hours- 12 hours.


Step 5:- 'Spread 'the marinated beef on a oven proof pan . 


Step 6:- Preheat the oven to 450 Degree Fahrenheit .Bake  ''the beef'' for  30 minutes  with 1 - 2 cup of water 
 

Step 7:- Heat 3 table spoon of  vegetable oil in a  'BIG' pan splutter 1 1/2 teaspoon of mustard seeds and add  2 - 2 1/2'' medium sized''  sliced Onion  


Step 8:- And saute until the onion becomes golden brown in color,  and add a chopped tomato.



Step 10:- Add 1/2 cup of water , and saute until the tomato becomes mushy.


Step 11:-  Add the half cooked (  Baked beef  from Step 6) into Step 10 pan .


Step12:-  Add  1/4 more cup of water, 1 teaspoon of pepper powder , 1/2 teaspoon of garam masala powder and few chopped cilantro .Cook for another 45 - 50 minutes on low  flame . Add more water if necessary !!!


Step 13:- Enjoy with  Steamed Rice , Tortillas, Chapattis, Fulkkas and even with DOSA !!!!........ :)

Beef Ularthiyathu ( Kerala style ) RECIPE #64







                                         Step 1:- Chop  2 lb of Beef  into  small cubes.


Step 2:- Add 2 teaspoon of Turmeric powder , 2 teaspoon of Kashmiri chilli powder, 1 teaspoon of pepper powder , 2 1/2 teaspoon of coriander powder and 2 1/2 teaspoon of garam masala powder into  the beef pieces.



Step 3:-  Add Crushed ginger root  ( 5 inch ) and  garlic cloves ( 4-7) and few curry leaves.




Step 4:- Mix well and keep it for 2-8 hours.


Step 5:- Saute 1 1/2  sliced Onion  with 2 teaspoon of salt.


Step 6:- Until the onion becomes dry.


Step 7:-At this 'point' add 2 table spoon of  vegetable oil.


Step 8:- And saute until the onion becomes golden brown in color.


Step9:- At this 'point 'add one chopped tomato.


Step 10:- And saute until the tomato becomes mushy.


Step 11:- Spread it ( ''Onion tomato mixture'' Step 10 ) on a oven proof pan


Step 12:- Add the marinated beef pieces( step 4).


Step 13:- Mix well and keep it for another 20 minutes. And preheat the oven to 450 Degree Fahrenheit 


Step 14:-Bake  ''the beef'' for  45 minutes  at 450 F with 1/2 - 1 cup of water and  another 1520 minutes at 300 F


Step15:-   Heat 2 tablespoon of oil / Ghee in pan , splutter 2 teaspoon of mustard seeds, and add  1/4 cup of ''thenga kothu '', 8-10 curry leaves and fry until  the coconut  gets brown in color.


Step 16:-  Now add the baked beef and saute until the beef pieces are dry.


Step 17 :- Enjoy with Rice , Tortillas, Chapattis,Fulkkas........ :)
