Egg Puffs ( Kerala Style ) RECIPE #67




Step 1:- Finely  chop  a medium sized onion,  3 '' of  ginger  root & 2 garlic cloves,  1- 1 1/2 green chilies ,  1/4 cup of  cilantro   and keep aside. 

Boil   4-6 Eggs . Remove the shells from the boiled eggs and keep aside.



Step 2:-   Heat 2 tablespoon of oil in pan , splutter teaspoon of mustard seeds, and add chopped onion , Saute for few minutes.



Step 3:- Add the  ginger, garlic and cilantro


Step 4:- Saute until the onion gets brown in color.


Step 5:- Bring down the heat  and add 1/2 teaspoon of turmeric powder ,  1  teaspoon of  kashmiri chilli powder, 1 1/2 teaspoon of garam masala  (  http://jesacos5.blogspot.com/2013/11/biriyani-powder-garam-masala-powder.html ),  and salt .Saute for few seconds.


Step 6:- And add  half  of a tomato ( chopped) .


Step 7:- Add 1/4 cup of water and cook for  1-2 minutes ,until the tomato becomes mushy. And keep aside .

  Preheat the oven to 400 degree Fahrenheit 


Step 9:- Cut the pastry sheets into square or rectangle , and place the onion-tomato mixture ( step 7) on one half of the sheet.



Step 10:-  Place a half of the egg over the'' mixture''  as in the picture.


Step 11:- Fold and press the  sides to seal , and  brush the top with egg white.


Step 12:- Bake for 20-25 minutes.


Step 13:-  Until ''the puff ''looks brown and fluffy.


Step 14:- Remove from ''cookie sheet'' and place in a  cooling rack for 5-10 minutes .


Step 15:- Egg puff ready....................:)
