Dates Pickle - Thalassery Style - RECIPE#129


One My 'Favorites'  :) :) 










Step 1 :-   Slice 1/4 lb of Dates into 3 or 4 pieces , as in the picture and keep  aside.



Step 2: Grate 2-3'' of ginger root  , 4-5  garlic cloves , 3-4 green chillies, and 2-3 sprigs  of curry leaves and keep aside. 


Step 3: Combine  2 teaspoon of kashmiri chilli powder,  1 1/2 teaspoon of turmeric powder, 1 teaspoon of cumin powder , 2 pinch of asafetida  and salt , and keep aside.  


Step 4:-  Heat a pan on stovetop and then add 1 cup of  vegetable oil and then heat the oil. 


Step 5:  Splutter 2 teaspoon of mustard seeds 



Step 6:  Now add the Step 2 Ingredients , Saute until the ginger and garlic gets  brown  color .



Step 7:  Now Bring down or switch off the flame  and add the  step 3 ingredients , saute until the  raw smell  of ''powders'' goes ''away'' .............


Step 8:  Now  add 3 -4 table spoon of distilled vinegar 


Step 9:   Add 2-3 small cubes of jaggery , mix well and 


Step 10:   add  the sliced Dates ( step 1)  



Step 11 :    Combine well and  cook at low medium flame for 15 minutes , until the dates becomes soft .......... and  the oil separates...... 



Step 12 :-  Dates Pickle  - Thalassery Style - is ready .......: -)  :-)  Enjoy as a side dish for Veg fried  rice/ chicken fried rice/ prawn fried rice / paneer fried rice  ..... Store    in an airtight container , in refrigerator.....  - JA- Mathew-
