Chicken puffs ( Kerala Style ) RECIPE#148









          Step 1 :-  Cut  1/2  lb  of chicken breast or thighs   into '' small ''cubes .   Microwave  the chicken pieces with salt, water  and pepper  , and set aside.


S                                   Step 2 :-   Heat  a tea spoon of vegetable oil ( canola)  in a pan ,  add    1 1/2  sliced onion ,           finely chopped  2 " ginger , 4-5 garlic cloves , 


                                                             2 green chillies , 


 and finely chopped 6-9 curry leaves . 


Saute until onion gets   gets transparent  and golden brown in color..


 Step 3:Bring down the heat and add   1/2 teaspoon of turmeric powder, 1 teaspoon of kashmiri chilli powder, 1 1/2 teaspoon of coriander powder, and 1/2 teaspoon of garam masala . Combine well with 1/4 cup of water 


 Step 4:-  Now add the  Step 1 chicken pieces .,


combine well,  and cook for another 20 minutes on low - medium flame  with 1/2 cup of water .  And keep aside . 


 Step 5 :Thaw  4-5 sheets of the puff pastry. Or make puff pastry (https://www.youtube.com/watch?v=eSUN3j5mTyE )  .  AND  preheat the oven to 400 degree Fahrenheit .




place  ''step 4 Chicken mixture / filling '' on one half of the sheet. 


Step 6:- Fold and press the  sides to seal , and  brush the top with egg white. 


Step 7 :-  Arrange on a cookie rack or  on a baking sheet .  


Step 8 :- Bake for 20-25 minutes. 


                                             Until ''the puff ''looks brown and fluffy.

Mongolian Beef Curry RECIPE#147








Step 1 :-  Julienne 2 carrots ,
   

2 celery stalks  and keep aside.


Step 2 :-  Cut  1 1/2  lb  of beef  fillet   into  'thin long strips' .  Dry the 'beef strips' with a paper towel .


Step 3:- Coat the  ' dry beef strips'  with  corn starch ,



and set aside for minimum 1/2 an hour . 


S                              Step 4: Heat  a pan on stovetop and then add  2 teaspoon of vegetable oil (          canola )  and then heat the oil.  

Step 5:Now add the  '' coated beef strips '' . Cook for 2- 3 minutes on high flame , 


And  drain on a paper towel  and set aside .


Step 6:- In the same pan ,add  a table spoon of vegetable oil ( canola) ,  add   chopped  2 green chillies ,  2 " ginger and 4-5 garlic cloves . Saute until the ginger -garlic gets light  brown in color .


Step 7:Now add the   a sliced onion , saute until it  gets transparent .


       Step 8:- Bring down the heat and add  3-4 table spoon of soy sauce  , 



 1/4 cup of corn starch 


3-5 teaspoon of red pepper flakes 


1/4- 1/2 cup of dark brown sugar or jaggery , and 1 cup of water 


 Step 9:-  Boil for 15 - 20 minutes , until the ''gravy '' becomes  thick. 


 Step 10 :-  Now add the ''cooked beef strips '' ( step 5)  and combine well . 


 Step 11:-  Add the julienned  celery , carrot and 1/4-1/2 cup of  chopped spring onion/green onion .  Add 2 table spoon of soy sauce , salt and 1/4 cup of water and cook for another 15- 20  minutes on low -medium flame.




 Step 12:Mongolian Beef Curry is ready...........Enjoy with ''sticky rice '' / steamed rice .......:)  JA- Mathew- ......:)

Mini Wheat Garlic Rolls RECIPE#146


I :-  PREPARE Garlic Onion Spread


II:-  PREPARE  ''Roll Dough ''

III:-  ''Make  the Rolls ''






I :-  Garlic Onion Spread

                                          Step 1:-   Combine finely chopped cilantro ( 1/2 cup ) 


2-3 finely chopped garlic cloves ,


finely chopped onion ( 3 table spoon ) ,


 and 1/4 cup of  unsalted butter  in a bowl . And  set  aside 



until the butter  becomes soft .



II:-  PREPARE  ''Roll Dough ''


                                          Step 1:-  Mix 1 teaspoon of sugar  in  1/2 cup of Luke 
            warm  water  and  add 3/4  teaspoon  of yeast , 1/2 table spoon of salt . 


 keep aside to' rise' .


        Step 2:-  Combine  Atta /  wheat  flour ( 2 cup )  ,



step 1 "raised yeast "


salt , 


                      and  olive oil ( 2 table spoon ) in a mixing bowl . 
                    

knead well until  you get a soft, springy dough. 
                  


                                  Step 2:- cover the dough  with a warm damp cloth. And keep  in  warm         place  ( preferably 78 degree Fahrenheit)   for 1  1/2 hour ( until the  dough doubles its size) .  Knead  again and ''keep it '' for another 1/2 an hour.






III:-  ''Make  the Rolls ''

                              Step 1:-   preheat  oven to 350 degree Fahrenheit.
                             Step 2:-  Spread the ''roll dough'' to  a (1/2 inch thick)  rectangle shape , and     spread  the mixture  ( the garlic - onion  spread ) evenly on the ''roll dough'' .  


Step 3:- Now roll the dough from one end to the other .


Step 4:-  Cut the ''rolls''  to  3-4 'pieces".



                                               Step 5:-  Transfer the "rolls' to a baking sheet. Brush  butter on the sides .



Step 6:-  Bake for 20-25 minutes , until the sides gets golden brown in color.



Step 7:-  Mini Wheat Garlic Rolls  is ready.......... Enjoy .............JA-Mathew- :)
