Matter Paneer Masala RECIPE#190








 Step 1:-  Soak 1- 1 1/2   cups of split green peas or whole green peas  for 2-3 hours .

Step 2:- Drain water from the Peas . 

Step 3:- Microwave the soaked peas   with 1/2 teaspoon of turmeric powder salt and  1/2-1 cup of water for 12- 15 minutes  on high power  or pressure cook the peas.. And keep aside.



Step 4:- Cut 450 grams of paneer into small cubes.

Step 5:- Heat a pan and add 1 table spoon of Vegetable oil .

Step 6:-  Fry the panner cubes until it gets light brown color on its edges and keep aside.



Step 7:- Heat 2 tablespoon of vegetable oil ( Canola) and  add  finely chopped  Onion ( 1 1/4  of a large one )   ,  5-6  finely chopped  garlic cloves, 3'' ginger root ,   and 4-5 green chilies  ,  saute until the onion becomes   transparent ,


  now add 10-12 black pepper, 7-9 cloves , 1 teaspoon of cumin  seeds  and 4-5  cardamom 


Step 8:NOW Bring down the heat and add  1/2 teaspoon of turmeric powder, 2 - 3 teaspoon of coriander powder, 1 1/2  teaspoon of kashmiri chili powder  saute for few minutes   , until the  raw smell  of  the 'powder' goes away .


  Step 9:  Now add   chopped tomato ( 1 1/2 )  , saute until the tomato becomes mushy .


Step 10 :-  GRIND ''Step 9''   to a smooth paste   and keep aside.

Step 11:-   Boil the "Step 10 paste "with a bay leaf , 3-5  table spoon of  spicy ketchup , and 2 table spoon of  dry methi leaves (crushed)   ,  3 table spoon of butter  , 1/2 teaspoon of fenugreek powder with 1/2 cup of water for 5-6 minutes on medium flame 


Step 12  :-  Add the  step 3 cooked green peas , 



add the  step 6 fried  Paneer cubes, 



3/4  cup of cream / fresh curd , and 2-5 teaspoon of pure honey/ 2 table spoon of brown  cane sugar . Cook for another 10  minutes on low flame . 


 Step 13 :-  Matter Paneer Masala  is ready  .......:) Serve hot with Tortillas , Chapattis, fulkas ..... Enjoy ................ :) -JA-Mathew-

Potato / Uralaikizhangu Fry ( Kerala Style ) RECIPE#189






Step 1:-Wash and peel 2 potatoes , 




julienne them  and keep aside.



Step 2:-   Heat 1/4 cup of   vegetable oil in a pan , splutter 1 -2 teaspoon of mustard seeds, 




 Now add  10-15 pearl onion ( chopped ) 1/4 of a  onion ( finely chopped) , 2-3 green chillies ( splitted ) 6-8 cloves of garlic ( crushed and sliced ), 2 twigs of curry leaves  , 


 and saute until the onion turns  to transparent  




Now add the potato / Uralaikizhangu( step 1)  and  a teaspoon of turmeric  powder , 1 teaspoon of kashmiri chilli powder,  1 1/2 teaspoon of coriander powder  and salt 


Combine well  with 2-3 table spoon of water  and cook( in low-medium heat) for 10-15  minutes , until the potato becomes  soft  [stir occasionally to prevent from sticking and burning]  . 


Now remove the lid  add more oil if needed 



and sauté  until the potatoes becomes light brown in color .



Step 3:- Potato / Uralaikizhangu Fry ( Kerala Style ) is ready .Enjoy with  steamed rice/ Chapatis   ... -JA-Mathew...:) 


Mentha ( mint leaves ) - Spinach Thoran RECIPE#188

Step 2:- Thoroughly wash   a bunch of  baby spinach or spinach  , and  2 twigs of mentha ( mint leaves ) 



finely chop the leaves  and keep aside .




Step 3:- Heat a pan , add 1 table spoon of vegetable oil ( canola) , and splutter 2 teaspoon of mustard seeds  ,



1/2 of an onion ( yellow) , 4-5 chopped garlic cloves, 2-3 spitted green chillies  curry leaves , saute for 4-5 minutes on medium flame , until the onion becomes transparent .





Now add the chopped leaves ,  1 teaspoon of turmeric powder, 1 teaspoon of cumin powder and salt . Combine . Cook on medium flame for 10 minutes , 


 and when it is half done   add  a cup of grated coconut  . And cook for another 4-5  minutes on low -medium flame , until the  water  has completely evaporated .


Step 4:-  Mentha ( mint leaves ) - Spinach Thoran   is ready ....Enjoy as a side dish for  steamed rice /chapattis/tortillas /fulkas ........JA-Mathew- :)  






Lemon Pickle ( Kerala Style )RECIPE#187

Step 1:-  Thoroughly  wash   Lemon  ( 6 no.  ) ,


steam the lemons until it becomes soft 


cut each lemon into 8 pieces , remove all the seeds and  keep aside 


 Step 2:-  Crush  5-6 '' of ginger root  , 




 and 7-12  garlic cloves  , and keep aside .


Step 3:-   Heat a pan and  add  1/2 cup of veg oil ( canola )  , splutter 2-3  table spoon of mustard seeds, 



add step 2  ginger and garlic ,


curry leaves ( 2 twigs ) 


Now bring down the flame and add 2 - 2 1/2  teaspoon of  kashmiri chiili powder , 1 teaspoon of turmeric powder, 1 teaspoon of fenugreek powder and  two pinches  of asafetida . Saute for few seconds .



Now add the lemon ( step 1) , salt , and 2 table spoon of vinegar .


combine well  and add  2-3 pinch of sugar/  a teaspoon of honey 



Step 4 :- Lemon  pickle is ready .......: -) Store    in an airtight container , in refrigerator.....  :-)  Enjoy as a side dish for steamed rice/ Biryani /Fried rice  ..... - JA- Mathew- 



Tomato - Okra/ Bendakaya/Ladies finger Curry ( Jess Style)RECIPE#186








Step 1:-  Thoroughly  wash and chop  Okra/ Bendakaya  ( 1 lb / 1/2 kg   as in  the picture below and  keep aside .


Step 2:-  Heat a pan , add 1 table spoon of oil ( canola) and splutter 1- 2 teaspoon of mustard seeds ,


 an onion ( medium sized  finely chopped ) , 3 '' ginger root ( finely chopped)   Saute  until  the onion becomes transparent . 


Now add the Okra/ Bendakaya ( step 1 ) , , saute for 5-8 minutes on low medium flame.



Now bring down the heat and add  1 teaspoon of turmeric powder, 1 1/2  teaspoon of kasmiri chilli powder , 2 1/2 teaspoon of coriander powder 1 teaspoon of cumin power . Combine well.



 add a cup of water , tomato  ( one  chopped ) 1/2 teaspoon of garam masala , 



 1/2 cup of chopped cilantro,  salt and 2 dried  red chillies .  Cook for until the  Okra/Bendakaya becomes soft  (  15- 20 miuntes on low medium flame ) .




Step 3:-   Tomato - Okra/ Bendakaya/Ladies finger  Curry ( Jess Style)   is  ready.......  Enjoy  with steamed rice /chapattis/tortillas /fulkas............:) ...... JA -Mathew-
