Special Potato Fry ( Jes Style ) RECIPE#235







 Step 1 :-  Cube cut  potatoes ( 2 large ) and keep aside .

 Step 2 :-  Heat a frying pan ( non stick )  and add   oil ( 2 teaspoons )  and saute cumin seeds ( 1 teaspoon )  and fennel seeds  ( 1/4 teaspoon ) .




Now  BRING DOWN TH EHEAT  AND add kashmiri chilli powder ( 3/4 teaspoon ) , turmeric powder ( 1/2  teaspoon ) coriander powder ( 3/4 teaspoon)  . 



Add the STEP 1  potatoes . 



Combine well and add cilantro ( 1/2 cup finely chopped )  and curry leaves ( 2 twigs , finely chopped ) 


Add pepper powder ( 1 teaspoon ) and  2 table spoons of water , cook for 2-3 minutes ,  and now   open the lid and add  vegetable oil ( 1-2 teaspoons ),  combine  ,  and cook for another  4-5  minutes on medium flame .


 Add more pepper powder (  if you want :) , -I love its spicy version - )



Add more cilantro ( 1/4 cup chopped ) . Combine and cook for another 4-5  minutes ( until the potatoes are done ) .





 Step 3 :-  Special Potato Fry ( Jes Style )  is ready ..... Enjoy as a side dish for   Steamed rice/  chapattis/ fulkas   ........JA-Mathew- :)

Salmon Curry ( Pathanamthitta Style ) RECIPE#234










 Step 1 :- Marinate fish pieces ( 1 1/2 lb/ 3/4 kg ) with  kashmiri chilli powder ( 1 teaspoon ) , turmeric powder (1/2 teaspoon )  , lemon juice ( 1 table spoon )  and salt , for 30 - 60 minutes .



 Step 2 :-  Shallow fry it  ,  and keep aside .



 Step 3 :- In the same pan splutter mustard seeds ( 1 1/2 teaspoon ) , cumin seeds (1/4 teaspoon ) , fennel seeds ( 1/4 teaspoon )  and a dried red chilli ( broken  into pieces )   .




Add finely chopped onion ( 1/4 of a big one ) , saute until it becomes transparent ,  


 and add  garlic (  crushed 4-5 cloves ) and ginger ( crushed ,  2") , saute until its raw smell goes away.


 Step 4 :-  Now  BRING DOWN TH EHEAT  AND add kashmiri chilli powder ( 1 1/2  teaspoon ) , turmeric powder ( 1 /2  teaspoon ) coriander powder ( 1 teaspoon)  .  Combine well. And add  2  cups of water .



fenugreek powder ( 1/2 teaspoon ) and a pinch of asafetida powder ,


Tamarind paste ( 1 1/2 teaspoon ) ,


 cilantro ( chopped 1/4 cup ) ,


curry leaves  ( 3-4 twigs ) and salt  , And allow to boil it for 18 minutes on medium flame .


 Step 5 :-  Now  add the fish pieces ( STEP 2) 



 Combine and "COOK " for another 15 minutes on low flame .




 Step 6 :-  Salmon Curry (  Pathanamthitta Style )  is ready ..... Enjoy with  Steamed rice/ Idly/Dosa ........JA-Mathew- :)
