"Jes Special" SPICY BEEF BIRYANI RECIPE#243






Steps/ stages 

I :-  MARINATE  BEEF

II :-COOK MEAT 

III:- COOK RICE 

IV:- LAYERING 

V:-  BAKING 

I :-  MARINATE  THE MEAT



  Step 1:-    Cut 3 lb / 1 1/2 kg  of beef  into 'big pieces'.  Make a smooth paste with 5-6' ginger root , 6-7 garlic cloves , a 1/2 -3/4 cup of  mint leaves, 6-7 green chillies and 1/2 cup of cilantro 




Marinate   beef pieces  with above made paste and  thick curd (3/4 cup ), turmeric powder ( 1 teaspoon )  and chilli powder ( kashmiri 1 teaspoon )  and refrigerate it   for  6 hours - to 12 hours  .





II :-COOK MEAT 


 Step 2:-  Saute the  marinated beef pieces for 2-3 seconds ( on high flame ) , and keep aide .




 Step 3:- Heat a thick bottomed pot / Dutch Oven  [ OVEN PROOF ], and saute  onion 3-4 medium sized, until it gets browned ) 



and add green cardamom ( 6-8nos)  , cinnamon ( 3"-4" stick ) , fennel seeds ( 2 teaspoons )  , cloves( 6-12 nos )  , black cardamom(  2-4 nos ) . 


add  star anise ( two petals  ), Saute  for few seconds , until its raw smell goes away !



Now bring down the flame and add turmeric powder ( 1 teaspoon )  chilli powder  ( 1 teaspoon ) , peppercorns ( 10-20 nos ) and few bay leaves  ( 2-3 )  . Again saute  for few seconds , until the "powder's "raw smell goes away ! :) 



Now add tomato ( 2 nos chopped ) . saute or close the lid and cook  , until the tomato becomes mushy .



Step 4:- And now add the step 2 beef , 





1 1/2 cup of water ( add more if needed )  and salt and cook on medium flame for  1 1/2 hours 



When its 'half done'' add  biryani masala  (2-3 teaspoons )[https://jesacos5.blogspot.com/2013/11/biriyani-powder-garam-masala-powder.html . Now open its lid and allow to evaporate the extra water . Transfer the beef to another pan .



Step 5:- Pre heat the Oven to 350 Degree Fahrenheit .


III:- COOK RICE 


Step 6:-  Heat the  same pan , add 3-4 table spoons of ghee , and add cardamom ( 2-4 nos )  , cloves  4-5 nos ) ,peppercorns ( 7-8 nos ), and bay leaves ( 1-2 nos )  saute for few seconds 



and add  turmeric powder  and chilli powder . 





Now add the soaked basmati rice ( 3 cups )  and saute it for 4-5 minutes ( until all the grains are separated) . 



and now add 3-4 teaspoons of shajeera ,  



and water (4 1/2 cups ) and salt  , allow to cook on medium flame ( ~6 minutes ,  until the bubbles comes ) .Now turn off the flame and leave  "the  pan " on the burner itself   for another 5-6 minutes . 


IV:- LAYERING 

 Step 7:-  [ MAKE SURE THE PAN IS OVEN PROOF BEFORE LAYERING PROCESS STARTS :)  ].  Now remove half of the rice , and layer the rice with fried cashew , raisins, cilantro ( chopped )  and  fried onion  , ghee ( 2-4 teaspoons ) and sprinkle rose water  ( 2-3 teasoons ) and kewra/kewda  water  ( 2-3 teaspoons ) 



and  layer half  of the beef ( step 4 ). 



Now layer the remaining rice and repeat the "process " :)  ( until the rice and beef gets finished :) )




V:-  BAKING 



 Step 8:-  Cover  ( tightly tuck in )  the pan with a heavy duty  aluminium foil .Bake  for 30 minutes on 350 degree FAHRENHEIT.
