Aviyal ( a mixture of Vegetables+Coconut + Curd+Coconut oil ) , Onam Special from Jes's Kitchen ! RECIPE #311





Step 1:-  Coarse grind Coconut (   I used frozen  , grated coconut , 340 gms  ~  1 1/4  cups   )  , green chilli  ( 5-6 nos )  and cumin seeds  ( 1 teaspoon) and keep aside .




Step 2:- Cut Vegetables lengthwise ,as in the 4th pic . The  vegetable that i used are [ Raw Plantain  ( 1 nos ) , Carrot  ( 3 nos ,  medium sized ) ,   long Beans ( 10-15 nos )  , Tindora ( 7-8 nos ) , Taroroot  ( 4 small )  , Cucumber  ( one ) , Snake Gourd  ( one ) , Egg plant/ Bringal ( 2 nos, long type  ) , Ash Gourd ( 1/4 of a medium sized )   and Caribbean Squash  ( one )] . And set aside  . I DIDN"T GET DRUMSTICK THIS TIME :( 


Step 3:- Heat a pan and add coconut oil  (  2 table spoons   ) and  splutter mustard seeds ( 2 teaspoons ) , 




Now add   Step 2  raw plantain   , carrot  ,   long beans  tindora ,  and taroroot   , saute for 2-3 minutes and 


now  add  remaining  step 2  vegs,  snake Gourd   , egg plant/ bringal  , Ash Gourd  and caribbean Squash   . And add turmeric powder( 1 1/2 teaspoons )  , kashmiri chilli powder ( 1 teaspoon ) , salt  water ( 1/4 cup ) and curry leaves ( 2-3 twigs ) 

And cook for 20 minutes on medium flame



Step 4:- Now add Step 1 coconut mixture , combine , and cook for another 3-4 minutes on medium flame



Step 5:- Now add curd   (  1 cup , medium  sour ) , combine and cook for another 2-3 minutes .




Step 6:- Now  add coconut oil  (  2 table spoons   ) , 


combine and switch off the flame :) 



Step 7 :-  Aviyal ( a mixture of Vegetables+Coconut + Curd+Coconut oil )  from Jes's Kitchen is ready .......: -) ..... Enjoy  with steamed rice :) J A  Mathew .
