Turkey Drumstick ( Indian Style ) RECIPE #51










Step 1:-   Peel back the skin of 2.30 lb ( 2-4 nos)  turkey drumsticks  ,' rub' 1/2 lemon juice all over the meat and keep aside .




Step 2:- Make a  paste with 2 table spoon of teriyaki sauce , 1  1/2 teaspoon of  turmeric powder, 1 teaspoon of Kashmiri chilli powder, 1 teaspoon of Garam masala http://jesacos5.blogspot.com/2013/11/biriyani-powder-garam-masala-powder.html)  and 1/2 teaspoon of black pepper powder.






Step 3:-  Marinate turkey drumsticks with the paste ( Step 2) .



Step 4 :- Sprinkle 1 1/2 teaspoon of garlic salt  and 1/2 teaspoon of thyme all over the  marinated meat and keep for 5-7 hours.


Step 5:- Preheat the oven to 400 Degree Fahrenheit . Bake for  30 minutes  at  400 F and 25 minutes at 350 F.

Modified Chicken Lollipop RECIPE #50






Step 1:- Cut chicken breast (100 gm)  or thigh into small cubes.


 Step 2:- Make a  fine paste with 3-4 green chilies, 1/4 small onion, few cilantro, and few curry leaves  and keep aside .



Step 3:- Marinate the chicken pieces ( step 1) with the paste ( step 2) , 1/2 teaspoon of turmeric powder , 1/2 - 1 teaspoon of ginger garlic paste,1 teaspoon of Soy sauce and salt   for 5- 6 hours




Step 4:- 'Thread' marinated chicken cubes into ''sticks''  and keep aside.


                                                               Step 5:-  Dip the' threaded  chicken' in  [ a mixture of whole purpose flour,  corn flour, salt & pepper powder] , then in to  [ egg white / '' beaten whole egg''] and then in to   [ Italian seasoned  bread crumbs.]


Step 6:-  Heat a  pan on stove top and then add oil and then heat the oil. Shallow fry the' lollipops', ( Until it gets brown in color) .


 Step 7:-  Modified  Chicken Lollipop  is ready :) Enjoy  :)

Turkey Cutlet [ Indian Style ] RECIPE #49








·                Step 1:-  Saute   onion (minced, 1/2  onion) ,  garlic ( finely chopped, 4 cloves),  green chillies ( finely chopped ,2-3nos )  and  ginger root (  finely chopped , 3 inch)  ,Until the onion becomes transparent .

        Step 2:-     Now add ground  Turkey  ( 16 OZ)   ,  1/2 teaspoon of Kashmiri  chilli powder , 1/2 teaspoon of turmeric powder and  cook   *thoroughly* for 10 - 12 minutes in medium flame . And then allow to cool ,  drain 'the turkey stock '  if any !!  , and keep aside .




  Step 3:-  Cook/ bake  1 1/2 potatoes (large)  in   the  'drained turkey stock ', and then mash it and keep aside.


 Step 4 :-   "Mince"  the  "cooked turkey"   ( step 2)  .




  Step 5:-  Combine  the mashed potatoes  ( step 3) and the  minced "turkey "  ( step 4) .




    Step 6:-  Make  small round/oval patties , and dip in egg white / '' beaten whole egg'' and then in bread crumbs.






·                               Step 7 :- Heat  a pan on stove top and then add oil and then heat the oil. Shallow fry the patties, flip them on both sides to cook completely( Until it gets golden brown in color) .


·                      Step 8:-  Place on paper towels to absorb excess oil.

     Step 9:-    Turkey Cutlet  [ Indian Style ]  is ready ....... Enjoy  with your favorite sauce.  ........................:) JA -Mathew-

Egg Moilee ( Kottayam Style ) RECIPE #48












Step 1:-Boil 5-7 cups of water with 3-4 teaspoon of salt ,  add  7-10 Eggs and allow it  to boil in a low flame for 5- 7 minutes. Remove the shells from the boiled eggs and keep aside.


Step 2:-  Slice  3- 4 medium sized onion,  Chop ( preferred  julienne cut3 '' of  ginger  root & 4-6 garlic cloves, chop 1- 1 1/2  tomato ,prepare 2 cups of thin coconut milk and 1 cup of thick thick coconut milk  and keep aside.


Step 3:- Heat 1 tablespoon of vegetable oil  in a pan . Splutter 2 teaspoon of  mustard seeds,   add 1 teaspoon of fennel seeds2-5 pieces of cinnamon sticks, 2-3 cardamom and  2-5  cloves  .Saute for few minutes.



Step 4:- Add 3- 4   onions , 3-4  splitted green chilies , 5 ''  ginger root  ( long cut ) ,4-6  Garlic cloves  (long cut )   and few curry leaves ( Step 2).  And  saute until the onion turns golden brown in color.



Step 5:- Bring down the heat  and add 2 teaspoon of turmeric powder , 1 1/2 teaspoon of garam masala  (  How to prepare garam masala powder :- http://jesacos5.blogspot.com/2013/11/biriyani-powder-garam-masala-powder.html ) , salt  and 1 1/2 chopped tomato . Saute for few seconds.

Step 6:- Add 2 cups of thin coconut milk. Cook for 10- 15 minutes  on  medium flame .




Step 7:- Add  the eggs ( Step 1)   , cook for an another 8-10 minutes on medium flame .



Step 8:- Now bring down the heat and  add 1 cup of thick coconut milk  and 1 - 1 1/2  teaspoon of crushed pepper powder mix well and cook for 5-7 minutes on low heat.




Step 9 :-  :) :) Serve hot with ''Vellayappam/ Kallappam/ Palappam''.












Vellayappam RECIPE #47







 STEP 1:-  Soak 3 cups of raw rice for 8- 10 hours

STEP 2 :-  Combine    Luke warm water ( 1/2 cup ) ,  yeast  ( 1 teaspoon  ) and   sugar  3 teaspoon  )  , and set  aside to rise as in the picture below .




STEP 3:- Drain water from the rice  ( Step 1 ) , grind it well  by adding cooked rice 1 1/2 cup ) and grated coconut  1  1/2 cup ) .



STEP 4:- Transfer the  step 3 ''paste''   in to a large bowl , mix it  well with  the "risen  yeast"  ( step 2),  allow to rest it  for 6-12 hours to ferment



STEP 5:- The  batter  ( step 4)  is  ready to make appams, if  it doubles in   amount as in the picture  below .



Completely fermented batter looks like as in the pic below ( lots of bubbles ) .


 STEP 6:- Just before preparing  the Appam  add  salt ( 2 - 3 pinch  ) , crushed cumin seeds (  1/4 - 1 teaspoon)  . If the batter is thick add some  fresh coconut milk. 

STEP 7:- Heat Tawa / pan  spread  oil  ( any vegetable oil, few drops ) , pour a spoonful batter on the center of the  pan.

STEP 8:-Cook for 1- 1 1/2  minutes  ( until all the bubbles breaks ) ,  and  turn to other side, until  both sides get golden brown in color .
