Step 1:- Wash , clean and cut boneless chicken thighs ( 2 1/2 lbs ~ 1 1/4 kg ) , marinate it with turmeric powder ( 1/2 teaspoon ) and lemon juice ( 2 tablespoons ) for 20- 30 minuets and keep aside .
Step 2:- Heat a pan and add oil ( any vegetable oil, 1-1 1/2 table spoon ) and splutter mustard seeds ( 11/2 teaspoon) , and add peppercorns ( 10-15 nos ) , cloves ( 4-6 nos ) , fennel seeds 1 1/2 teaspoon ) , cinnamon stick ( 1 , small ) , cumin seeds ( 1/2 teaspoon ) , cardamom ( 8-10 nos ) , saute until you get a nice aroma of whole spices ,
and add red dried chill ( 3-4 nos ) ,
add onion ( red , 2 big nos , sliced ),
add garlic ( chopped , 8-10 cloves ) ginger ( chopped , a big pieces of a root , OR chopped 3 table spoons ) , saute for few seconds ( until onions becomes transparent and light brown onion color ) .
NOW BRING DOWN THE FLAME and add turmeric powder ( 1 teaspoon ) and coriander powder ( 3 teaspoon ) ,saute for few seconds and ,
add Kashmiri chili powder ( 1 1/2 teaspoon ) , saute for few seconds and
add tomato ( chopped , medium two numbers OR big one ), combine ,
and add water ( 1/2 cup , hot or lukewarm ) and salt .
And COOK for 10-15 minutes on medium flame ( until the gravy becomes thick as in the pic below )
Step 3:- Now add the step 1 chicken pieces ,
combine and saute for 2-3 minutes , and close the pan and cook for 30-35 minutes on medium flame
now add coriander leaves ( chopped , 1 cup ) , combine and cook for another 2-3 minutes .
