Easy , Jes Special , Baked Cornish Hen RECIPE #293





Step 1:- Wash and  clean  Cornish hen ( 2 packs , ie  4 hens ) , and 


  place them in a ZIPLOC bag and set aside .




Step 2:- In a Mixing bowl , combine turmeric powder ( 1 1/2 teaspons ) , brown sugar ( 1/2 cup ) , salt, pepper powder ( 2 teaspoons) , coriander powder ( 3 teaspoons ) , fennel seed powder ( 1/4 teaspoon) , ginger powder ( 1 1/2 teaspoon ) , cumin powder ( 3/4 teaspoon)  , cinnamon powder ( 1 teaspoon ) , allspice powder ( 1 teaspoon ) , 



orange juice  (  freshly squeezed,  1 cup  ), 


 water  ( 1 1/2  cup )  ,


and whisk  them all together and set aside . 


Step 3:- Pour the step 2 mixture to  step 1 ZIPLOC bag   , shake it well until  the "hens " coat well with the watery marinade , 


and refrigerate it for  overnight  to 24 hours .



Step 4:- Preheat the oven to  400 degree F ~ 204 Degree C 

Step 5:-  Remove the  hens from  the watery marinade  and   boil the remaining watery marinade , continuously stir it  ,  


until it gets a thick consistency as in the pic below   and set aside . 



Step 6:- Tuck  an orange ( 1/2 of )  piece to  inside of each  hen  ( step 3 hen ) , secure its  legs with a twine  , brush  each with   oil  ( olive oil preferred OR any vegetable oil )   ,  sprinkle pepper powder  & salt , and place  them ( its breast down )  on a oven  proof pan .



Step 7:- BAKE  for 70  minutes and  then take it out and  and  brush  them with the step 5  "  boiled marinade  " and  bake for  15  minutes and then BROIL  for 5 minutes on each side .


Step 8:-  Easy , Jes Special , Baked  Cornish Hen  is   ready.................Enjoy  -JA Mathew-
