Step 1:- Make a smooth paste with 1 table spoon of coriander seeds, 2 cardamom , 5-6 black pepper, 2-3 cloves, 1/2 cup of chopped italian parsley , 5-9 curry leaves , and half of a bay leaf. . Add 2 teaspoon of kashmiri Chilli powder, 1 1/2 teaspoon of turmeric powder, 1 teaspoon of garam masala, 2 -3 table spoon of ginger garlic paste and salt to the paste , and combine well . And keep aside.
Step 2:- Marinate 3 -4 lb of Lamb/Goat/Beef neck bones with the Step 1 paste and keep for 8-12 hours.
Step 3:- Add finely chopped medium sized onion ( 1 nos) , and a medium sized tomato .
Step 4:- Add 3-4 cups of water and cook for 1-2 hours on low-medium flame , until its well done .
Step 5:- Jes Style Spicy Ellu Curry is ready ........Enjoy with Chapattis/ tortillas / fulkas /steamed rice .......... JA-Mathew-. .........:) :)
