Moru curry with Ash Gourd/ winter melon RECIPE#115


Ash Gourd/ winter melon Moru curry 






Step 1:-  Blend  3 cups of the curd  in a mixer and keep it aside .

Step 2:-  Heat 2 table spoon of  vegetable oil in a pan. Splutter  2 teaspoon of mustards seeds . 


Step 3:- Add 1/4 finely chopped onion and 2-4 garlic cloves. Saute for few minutes.


Step 4:-  Add few curry leaves, and saute until the onion becomes golden brown in color.


Step 6:-  Bring down the heat and add 2 1/2 teaspoon of turmeric powder, 1/2 teaspoon of Kashmiri chilli powder, 1 teaspoon of Fenugreek  powder , a pinch of Asafoetida powder,  salt and add 2 table spoon  of water. 




Step 7:-   Now add the 3/4 cup of chopped ash gourd , 2 teaspoon of crushed ginger root ,1/2 cup of water , and cook until the ash gourd is done 




Step 8:-  Bring down the  heat and add the  curd ( step 1) 


Step 9:- Mix well.


 Step 10:- ''Keep'' in low flame for another 7- 10 minutes .


 Step 11:Moru curry  with Ash Gourd/ winter melon is  ready.........:)

Egg-Paneer Curry ( Jes Style) RECIPE#114



Egg-Paneer Curry ( Jes Style) 




Step 1:-Boil 3-4 cups of water with 1-2 teaspoon of salt ,  add  4-6 Eggs and allow it  to boil in a low flame for 5- 7 minutes. Remove the shells from the boiled eggs and keep aside.


Step 2:-  Fry 100 grams of  paneer cubes in vegetable oil of butter  and keep aside.



Step 3:-  Chop   3/4 of an onion,  3 '' of  ginger  root & 4-6 garlic cloves, 2-3 green chillies. and keep aside.


Step 4:- Heat 2 tablespoon of vegetable oil  in a pan . 



Step 5:-  Splutter 2 teaspoon of  mustard seeds.


Step 6:- Add the chopped onions ,  green chilies ,  ginger root ,  Garlic cloves [ Step 3] , 1/2 of a star anise, 3-4 cardamom, a cinnamon stick, a bay leaf  and 1 1/2 table spoon of fennel seeds   .  And  saute until the onion turns golden brown in color.


Step 7:- Bring down the heat  and add 1 1/2  teaspoon of turmeric powder , 1 teaspoon of chilli powder, 1 1/2 teaspoon of coriander powder  ,  and salt . Saute for few seconds with 2 table spoon of water .




Step 8:- Add the fried paneer  ( Step 2) .


Step 8:- Add the boiled eggs  ( Step 1) 



Step 9:- Combine well with  1 1/2 cup of water . Add few curry leaves , and cook for 20 minutes in low flame .


Step 10 :-  Jes Style  Egg-Paneer Curry  is ready.....................:) :)

Meenvattichathu ( Jes Style) RECIPE#113


Meenvattichathu ( Jes Style)




Step 1:-Chop  6-9  garlic pieces  ,2 " of ginger root,   5-6 pearl onions 2-3 green chillies and  1/2 onion .



Step 2:-  Heat a pan  and saute onions, garlic and ginger ( step 1) 



Step 3:- when the onion gets transparent add the green chilli , and 2 teaspoon on crushed ginger garlic. and saute for few minutes.



Step 4:-  Now add  1/2 chopped tomato , 1/4 cup of water , 2 teaspoon of turmeric powder, 1 1/2 teaspoon of kashmiri chilli powder, 1 teaspoon of coriander powder ,  salt  and 1 teaspoon of fenugreek powder



Step 5:- Cook for  until the tomato becomes soft and mushy.


Step 6:-Apply the paste ( Step  5)  on fish pieces ( 3-4 lb) .  Combine well and keep it for  20 - 30 minutes for marination. And preheat the oven to 350 Degree Fahrenheit .




Step 7:-Bake  ''the  marinated fish '' for  20 minutes  at 350 F with 1/4-1/2 cup of water and  another 10-15 minutes at 300 F.




Step 8 :- Meenvattichathu ( Jes Style) is ready........................:)

Step 1:- ' MAKE' DOSA BATTER

Step 2:-   Chop Vegetables ( 2-3 spring onion, a celery , 1/2 onion, 1/2  green capsicum , tomato )  and grate  a carrot  .



Step 3:-  Microwave the vegetables ( step 1) , and keep aside.



Step 4:- Heat  a Tawa / pan  spread little oil /  use non stick tawa , pour a spoonful of dosa  batter ( step 1) on the center of the  pan as in the picture.


Step 5:- ''Cook ''for few minutes [ until some  bubbles  appear  on the surface


Step 6 :- Now  ''sprinkle'' the Microwaved vegetables ( Step 3). Cook for few  more minutes  until  it gets brown color  on the sides .


Step 7:- Now  flip the dosa to  the other side ,cook for  until it is done !!!!.

EASY CHICKEN PANANG CURRY RECIPE#111


EASY CHICKEN PANANG CURRY , Specially made for Church's potluck .:) :) 



Step 1:-   Cut 6 lb of chicken breast into thin diagonal   pieces ,  marinate with  2 table spoon of PANANG CURRY PASTE, and  keep aside .






Step 2:-    Microwave the marinated chicken for 15 minutes and keep aside 


Step 3:-    Julienne a red pepper , a green pepper ,2-3  carrots , 10-12 snow peas and 1 1/2 onion.



Step 4:-     Microwave the  step 3 vegetables ( red pepper , green pepper , carrots ,snow peas )   for 7 minutes and keep aside .


Step 5:-  Heat 1/2- 1 cup of vegetable oil in a pan . 


Step 6:- Add sliced onion  ( step 3) , saute f until  the onion slices become transparent . 


Step 7:- Then bring down the heat and  add 8-10 table spoon of PANANG CURRY PASTE and saute for few seconds 



Step 8:-  Add 300 ml of coconut milk.   Stir  well  . 


Step 9:- Add a bay leaf and 3-5 table spoon of palm sugar ,  boil  for 5-10  minutes. 



Step 10:-  Add ''Microwaved '' Chicken pieces  ( step 2). And cook for 12-15 minutes on medium flame .


Step 11:-  Add ''Microwaved  '' vegetables ( Step 4) 


Step 12:- Combine well and cook for another 10 minutes on low medium flame .


Step 13:- Add another  170ml of coconut milk


Step 14:- Mix well .Cook for 10 minutes on low medium flame .
