Hyderabadi White Chicken Korma RECIPE#126








Step 1:- 'Boil'  chicken  ( 5-8 chicken drumsticks)   with enough salt and  water,  till it is half done  and keep aside.


Step 2:- Make a smooth paste with 3/4 cup  of chopped cilantro, 4-5 green chillies, 15-35 soaked almonds or cashew nuts , 5-8 garlic cloves, 1 table spoon of pepper powder or 10-13 black pepper corns and   1/2  a cup of curd .


Step 3:- Heat 2 table spoon  of vegetable oil in a pan and add a sliced onion , saute until the onion   becomes 'transparent' .


Step 4:- Add the Step 2 ' paste' and saute  until  oil  separates from the paste  .


Step 5:- Now add the  step 1 ' half cooked chicken drumsticks and the water ( broth )'  , cook for another 20-30 minutes in a low -medium flame .




Step 6:- Hyderabadi White Chicken Korma   is ready....................................Enjoy with fulkas/ chapatis /tortillas/ steamed rice .......:)  -JA  Mathew-

Fish curry with Moringa drumsticks (JES STYLE ) RECIPE#125





Step 1:- Heat   2 table spoon of vegetable oil in a pan . Splutter 1/2 teaspoon of  mustard seeds. Add  1/2 of a onion (finely chopped)  , 3-4   garlic cloves  and  3'' ginger root . Saute  until the onion becomes transparent .


Step 2:- Make a smooth paste with the Step 1 '' ingredients ''.


Step 3:-  In the same pan ( step 1) add the step 2 paste , 2 teaspoon of turmeric powder, 2 1/2  teaspoon of kashmiri chilli powder, and 1 teaspoon of fenugreek powder, and combine well .



Step 4:-   Add 5-9  Moringa drum sticks (http://en.wikipedia.org/wiki/Moringa_oleifera ). Combine well.


Step 5:-    Add 1 /2 cup of water , a sliced tomato, 2 sliced  green chillies , salt   and two pieces of coccum /kudampuli/meen puli. Allow to  boil  for  15- to 17 minutes .



 Step 6:-   Add sliced  (2 lb  -1 kg) fish pieces , and few curry leaves  ( http://en.wikipedia.org/wiki/Curry_tree).


Step 7:-   Cook for  15 -20 minutes in medium flame , until the fish is done .


Step 8:-   Fish curry with  Moringa drumsticks (JES STYLE ) is ready...........:) ........:) Enjoy  with steamed rice/chapattis/ tortillas..............- JA Mathew-

Pininyahang Manok ( Pineapple Chicken ) - Filipino Style - RECIPE#124







Step1 :- 'Make' juice with 1/2 cup of chopped pineapple pieces .





Step 2:- ' Coat  Chicken  drumsticks  (4-7 nos)    with  Step 1 juice ,



  2 table spoon of soy sauce ,


 and  salt.


Step 3:- Combine well and keep it for minimum 1/2 an hour.


Step 4:- Heat  a pan and add 2 table spoon of oil.


Step 5:-Add 4-5 chopped garlic cloves , saute for  3-4 minutes .


Step 6:- Add a sliced onion ( I used white onion ) , Saute until it becomes transparent and light brown in color.



Step 7:-  Now add a tomato chopped ) and a carrot , and saute for 5- 6 minutes on medium flame .



Step 8:-  Add the ''Marinated chicken drumsticks ( step 3) , and combine well .


Step 9:-  Add 2 1/2- 3  table spoon of black pepper powder .


Step 10:- Saute for 4-5 minutes  and  add  1/4 cup chunks / chopped of pineapple pieces 


Step 11:-  Add 1 cup of water .


Step 12:-  Close the lid and cook for 30 minutes  on medium flame and another 15 minutes  on low flame .( UNTIL THE CHICKEN IS DONE ) 


Step 13:-  Now add 1 cup of coconut milk or cream , I used coconut milk. 'Cook' for another  10-15 minutes on low flame .



Step 14:- Pininyahang Manok ( Pineapple Chicken ) - Filipino Style  -  is ready ............ enjoy with steamed rice ..........:) -JA Mathew-

Fish Fry ( Goan Style ) With Swai Fillet RECIPE#123


Fish Fry ( Goan Style )With Swai  Fillet 



 Step 1:- Cut 4-7 Swai fillet in a  'rectangular shape'.



Step 2:-   Make  a smooth paste with 1-2 garlic cloves, 2'' ginger root,1 1/2 table spoon of coriander seeds, 1 teaspoon of cumin seeds,


Step 3:-  Combine the' paste' ( Step 2)   with  1 teaspoon of Kashmiri chilli powder, 1 teaspoon of turmeric powder, 1/2 teaspoon of Cumin powder and  salt .





Step 4:- Marinate the fish pieces ( step 1)  with  the ''paste '' ( step 3)  and


 keep it  for minimum 3 hours .


Step 5:- Heat  3- 5 table spoon of  vegetable oil in a pan .





Step 6:- 'Roll'  the marinated fish pieces ( Step 4)   in  Sooji / Rava/ Semolina .


Step 7:- ' Place' the   'coated' fish pieces in to  the  hot oil ( Step 6) in the pan   and fry   with few cilantro stems until  it gets '' light  brown'' on both sides  .



Step 8:- Drain  the 'fried fish pieces ' on a paper towel



Step 9:- Enjoy ......Goan Style Fish Fry is ready..........:) JA Mathew -
