Fish Molee / Moilee /Molly ( Indian Style ) RECIPE#216








Step 1:- Marinate  fish  ( 3 lb) pieces with turmeric powder  ( 1 1/2  teaspoon )  , lemon juice ( 2 table soon )  and salt  for 20 minutes .
Step 1:-  Prepare 1 1/2 cups of thin coconut milk and 1 cup of thick coconut milk  and keep aside.





Step 3:-  Grind 7-9 cashew , 3-4 cardamom , 2-3 cinnamon sticks, 5-8 black cloves  and 1 1/2 teaspoon of fennel seeds   and keep aside.




Step 4:- Heat a pan , add 3-4 table spoon of  vegetable oil and splutter 1 1/2  teaspoon of mustard seeds .



Step 5:-  Add  onion (  3- 4 medium sized  sliced )  


add 3" of  ginger  root & 4-6 garlic cloves ( julienned  ) ,   3-4 green chillies ( splitted ) , and 8-10 curry leaves  , and saute   until the onion is transparent .



Step 6:- Bring down the heat  and add 2 teaspoon of turmeric powder , 1 1/2 teaspoon of  coriander powder and  salt  Saute for 1-2  seconds.





Step 7:- Add  thin coconut milk (  step 2 ) . Boil for  10- 15 minutes  on  medium flame .





Now add  tomato ( half of a big one ,  sliced ) 




Add the  STEP 3 paste , boil for another 2 -3 minutes on medium flame.



Step 8:-  Now add   the STEP 1 FISH  COOK FOR  10- 12 minutes on medium flame .


Step 9:-  Now add  a teaspoon of pepper powder , 



few more curry leaves , and a tomato ( sliced ) , 



thick  coconut milk (  step 2 ), 



 cook for an another  10- 12  minutes on medium flame  ( until the fish pieces  are well done ) .




Step 12 :-  Fish Molee / Moilee /Molly  is ready .......: -)  :-)  Enjoy as a side dish for Steamed rice  /Chapattis/Tortillas /Fulkas /Vellayappam/ Kallappam/ Palappam..... ... Enjoy ...-JA- Mathew-  :) 



Celery- Moru Curry ( Jes Style ) RECIPE#215








Step 1:-  Blend 3-4  cups of curd  in a mixer and keep aside 

Step 2:-    Finely chop  2-3 stalks of celery  and keep aside .

Step 3:-  Heat 2 table spoon of  vegetable oil in a pan. Splutter  2 teaspoon of mustards seeds  and 1/2 teaspoon of cumin seeds . 





Step 4:- Add   onion  ( finely chopped ) , garlic and ginger (finely chopped), 2-3 green chillies (finely chopped). 


Add the step 2 celery ,



8-10 curry leaves, 2-3 dried red chillies , 




Bring down the heat and add 1 1/2 teaspoon of turmeric powder, 1/2 teaspoon  of Kashmiri  chilli powder, 1 teaspoon of Fenugreek  powder , a pinch of Asafoetida powder ,  and combine well.  Saute   until the onion becomes golden brown in color.




Step 5:-  Add salt and 1/2 cup  of water and  bring to boil for 12-15 minutes on medium flame. 




Step 5:-  Bring down the  heat and add the  curd ( step 1) 

Step 6:- "COMBINE " well.  And ''keep'' in low flame for another 7- 10 minutes .





Step 12:-   Radish - Morucurry ( Jes Style )  is ready ........................:)




Prawn / Chemmeen / konju Curry ( Kerala Style ) RECIPE#214









Step 1:- Heat 2 table spoon of vegetable oil  in a pan , splutter 1/4 teaspoon of mustard seeds 



2-3 garlic ( chopped ) ,  2 inch of ginger  chopped ) , 4-5  green chilli( chopped ) saute  for 2-3 minutes  



 add  a  onion  ( chopped  ) , 



Saute  until the onion becomes transparent , Bring down the heat and add 1 teaspoon of  chili powder,1 teaspoon of turmeric powder,1/ 2 teaspoon of fenugreek powder ,  a pinch of asafetida . Saute  for  2-3 seconds .



Step 2:- Add  cleaned ,  de-veined   Prawns ( 16 oz/ 40-60 count )  





Step 2:- Add a  tomato ( chopped) , tamarind ( 1/4 of a lemon size )  ,8-10 curry leaves ,11/2 cup of water and salt . Cook for 25-35  minutes on medium flame ( until the prawns are well done ) 



Step 12 :- Prawn / Chemmeen / konju  Curry  ( Kerala Style ) is ready .......: -)  :-)  Enjoy as a side dish for steamed rice  /chapattis/tortillas /fulkas ..... ... Enjoy ...-JA- Mathew-  :)

Carrot Cake RECIPE#213

 Step 1 :-  Preheat the oven to 350 Degree Fahrenheit .

Step 2:-  Grease and flour a oven proof   9"x 13" pan  OR line it with parchment paper , keep aside .

Step 3:-   Melt 8-10 table spoon /  1 1/2 stick  of butter in a mixing bowl .


Step 4:- Add 3 eggs , and beat well , 




Add 1 1/2  cup of  brown sugar / white sugar ,




a table spoon of  vegetable oil . 



2-4 drops of vanilla extract, a pinch of salt ,  1/2 teaspoon of garam masala, 3/4 teaspoon of cinnamon powder , 2 pinch of nutmeg powder , Combine well and keep aside .




Step 5:-  Combine   2  cup of all purpose flour  ( maida)   ,  1  teaspoon  of baking powder  ,   11/4  teaspoon  of baking  soda  ,   3  teaspoon  of  custard  powder .




Step 6:-  Combine   STEP 5  and STEP 4  .

Step 7:-   Add 2 cups of grated  carrots and a cup of rasins . COMBINE .




Step 8:-  Pour 'the  step 7  batter '  into  STEP 2   pan ,




Bake for  25-30   minutes , until a '' wooden tooth pick '' inserted into the center of the cake comes out clean. Remove from the pan  and place in a  cooling rack for 10-15  minutes .



Step 7 :-  Carrot cake is ready......................Enjoy ....JA-Mathew-
