Easy String Hoppers / Idiyappam/ Noolputtu ( A South Indian Breakfast Recipe For Beginners) ! RECIPE #303






"Things "you need to make   String Hoppers  
1:- String Hoppers Press   2:- Idly maker 


Step 1:-  Boil water ( 1/2 cup )  in idly maker .


Step 2:-  Heat a pan , and  dry  roast rice flour ( 2 cups , on medium flame , 4-6 minutes, until you see steam  coming from the flour  )  , and switch off the flame .



Step 2:-  Slowly add water ( hot , 2 1/2 cups ) , and  , combine continuously with a spatula   and fold it into a dough consistency  ( its not necessary to knead the dough like that we do for making chapathi )


Step 3:-  Fill  the step 2 dough ( 2-3 scoops ,  and make sure  the dough is hot )   in string hoppers  press ,  turn its handle  , and allow the  hoppers  to collect  in  a pre greased idly moulds  , as in the pic shown below .



Step 4:-  Arrange the mould  racks on stand  ( ( one above the other , as in the pic shown below ) and sprinkle grated coconut over the hoppers .



Step 5:-  Place them ( idly moulds )  in  step 1 idly maker ,


close its  lid, and steam it  for 8-10 minutes  (on medium flame) .  


String hoppers is ready, and 


transfer them into a casserole food warmer  and  [repeat   step 3 , if dough remains ] and serve hot :) .

'Jes Special' , Easy , Plantain Fry RECIPE #302





Step 1:- Wash  and 




remove the skin of plantain ( ripened , 3-4 nos ) ,  and 


cut   them  into   pieces  ( as  in the picture below ) and set  aside .


Step 2:-    In a Mixing bowl , combine whole purpose flour   ( 1 1/4 cups  ) , turmeric powder  (  1/2 teaspoon ) , brown sugar  (  1/2  cup )   ,  cardamom  powder  ( 1 teaspoon) ,  salt  ( 1 pinch ) , 



 whole milk   ( 1/4 cup )  , 



 well and add water  ( 1/4 cup ) , and 



 whisk it together into a smooth flowing batter  ( as  in the picture below ) . And set aside . 


 Step 3:-Dip  step 1 banana pieces in  step 2 batter and set aside  .



Step 4:-  Heat a pan and add oil ( vegetable , 1/2 -1  cup ) and  heat  the oil ,



Step 5:- Fry  the step 3  banana pieces ,  until it  gets golden brown in color ,  4-5 minutes on each side,  on medium flame ) , 



and drain them on a paper towel.



Step 6 :- 'Jes Special'  , Easy , Banana fry is ready .......: -) enjoy  .....J A Mathew :) 



Easy , Tasty , Baked Corn RECIPE #301





Step 1:- Preheat Oven to 350 degree F  .

Step 2:-  Remove the husk and silk from the corns ( 5-6 nos )  ,  wash and set aside  




Step 3:-    In a Mixing bowl , combine  butter ( 5 table spoons ) pepper powder  ( 2 teaspoons  ) ,



  salt  ( 1/2 teaspoons)  ,  sugar   (  a pinch ) ,  and 


   lemon juice   ( from 1/2 of a lemon ) ,  well and  apply it on step 1 corn 's 



 surfaces , and wrap  each of them 


on  an aluminium foil ,



 and place them on a cookie sheet .


Bake for   15-18 minutes .


Step 4:- Easy , Tasty ,  Baked Corn    is ready .......: -) enjoy   .....J A Mathew :)

'Jes Special' Alligator Fry RECIPE #300






Step 1:- Wash , clean  and cut  alligator filet  ( 1lb ~ 1/2 kg )  into small pieces  ( as 




 in the picture below ) and set  aside .


Step 2:-    In a Mixing bowl , combine pepper powder  ( 1 teaspoon  ) , Kashmiri chilli powder  ( 1/2 teaspoons)  , onion powder  (  1 1/2 teaspoons) , turmeric powder  (  1/2 teaspoon )  salt    ,  ginger garlic powder  (  1 teaspoon)  ,  fennel  powder  ( 1 teaspoon) ,



and  lemon juice   (   juice of a 1/2 lemon)  and set  aside .




Step 3:-    Marinate  step 1 alligator pieces in step 2 marinade  , 



and refrigerate it for   20 to 60 minutes  .



Step 4:-   Combine bread crumbs   ( 1cup, Italian style   ) and 


Kashmiri chilli powder  ( 3/4  teaspoons)  in a mixing bowl .





Step 5:- Coat the step 3 alligator pieces 




in step 4 bread crumbs , and set aside  .




Step 6:-  Heat a pan and add oil ( vegetable , 1/4- 1/2  cup ) and  heat  the oil ,






fry the step 5 coated  alligator pieces  , ( until its surfaces  get golden brown in color ,  4-5 minutes on each side,  on medium flame ) , 




and drain them on a paper towel.



Step 3 :-'Jes Special' Alligator Fry   is ready .......: -) enjoy  with your favorite sauce .....J A Mathew :)

Jes Special Easy Diamond cuts RECIPE #299






Step 1:- In a mixing bowl , combine    whole purpose flour  ( 1cup  ) ,  sugar ( 3/4 cup ) , salt  ( a pinch  ) and baking soda  ( 1/2 teaspoon )  well and  knead it into 




smooth ball as in the pic below  , and 



cover it with a damp paper towel , allow to rest for minimum 60 minutes .




Now divide the dough into  4 small balls , and 


spread the 'balls '   as thin as possible  , 



 as in the picture below .



Now cut them ( with a knife or a pizza cutter ) into small diamonds  , 



( as in the picture below  )



Step 2:-  Heat a pan and add oil ( vegetable , 1 cup ) and  heat  the oil and fry the "diamonds"  ( with out touching them with our  hands  :) ) , 




 until its 


both sides get golden brown in color , as in the picture below .



 Drain them on a paper towel.
