Flavorful Juicy Oven-Roasted Rotisserie Chicken ( METHOD 2 ) From Jes's Kitchen ! RECIPE # 355

FOR EASIER  UNDERSTANDING I DIVIDED THE WHOLE PROCESS OF MAKING INTO  5 MAJOR STEPS -
I. WASH AND CLEAN THE CHICKEN  
II. BRINE THE CHICKEN 
III . MARINATE THE BRINED CHICKEN 
IV . BAKE
 V. BROIL




I. WASH AND CLEAN THE CHICKEN  




STEP1:- Wash  chicken throughly 3-4 times ,  a whole bird ,   4 lbs~ 2 kg ) and 




pat dry with a kitchen paper towel  and set aside.





II. BRINE THE CHICKEN 

STEP 2:-  Combine water ( 9 cups ), sugar ( brown sugar , 2 teaspoons) , salt ( 4 table spoons ) , bay-leaf ( 2 nos) , cloves ( 7-15 ), peppercorns ( 5-8 ) OR pepper powder ( 1 1/2 teaspoons) dried thyme ( 1 1.2 teaspoons) , cinnamon stick ( a small one ) ,  parsley  ( few) ,  and a lime ( one , cut into circular slices  ) ,  in a big pan , and   boil   and then allow to cool it completely .







STEP 3:- Now immerse the STEP 1 chicken completely  in brine water  and  cover it with a lid and refrigerate for 12-16 hours .





Now DISCARD all the brine water and pat fry the chicken with a kitchen paper towel and transfer it into a Oven safe bowl  and make some  cuts on  its breast  and  keep aside .






III . MARINATE THE BRINED CHICKEN 

STEP 4:-  Combine  butter ( 1/2 stick ~ 1/4 cup ) , black pepper powder ( 1 teaspoon ) , paprika ( 1 teaspoon ) , garlic powder (2  teaspoons ), onion powder ( 2 teaspoons)  , cumin  powder ( 1 1/2  teaspoons)  ,  salt ,  





in a mixing bowl  , combine well and  



add soysauce ( 2 table spoons) . Combine well and 



rub  generously :)   all over the STEP  3 chicken ( both  outside , underside  and its cavities ) .

STEP 5 :- Tie the chicken's  legs with a kitchen twine OR truss the chicken  [ https://www.chefsteps.com/activities/tips-tricks-best-way-to-truss-a-chicken]  and set aside .


 Now turn the bird dowm ( breast down)  and keep  aside .





IV . BAKE

STEP 6 :-  Preheat the Oven to 375 Degree Fahrenheit ~ 190 Degree Celsius  .

STEP 7 :-  Bake the STEP 5 chicken for   45 minutes 


And now take the bird out and  it looks like this ( as in the pic below ) , 



  and turn the bird to the other side ( back of the bird  facing down )  and  



bake for another  45 minutes .



 Again :) take the bird out , and turn again  (to breast down ) and bake for 10-20 minutes  .






                                                                                     V. BROIL


STEP 8 :-  Change the Oven's  setting to Broil and  broil  for 5 minutes ( on each  side) 




until its surfaces looks like  as in the pic below   .
