Chicken Gizzard Masala ( Jes Style ) RECIPE#268





Step 1:-   Cut  and clean chicken Gizzards ( 1 lb~ 1/2 kg)  into small pieces .
 And marinate it with turmeric powder ( 1/2 teaspoon) , pepper powder ( 1/2 teaspoon) and salt for 30 minutes .





cook  ( Instant pot - 9 minutes on high power , stove top - 20 minutes on low flame  )   and keep aside .



Step 2:- Heat a pan , add a table spoon of vegetable oil , splutter mustard seeds   ( 1/2 teaspoon)   and add  fennel  seeds (  1/2 teaspoon )  ,  cloves ( 3-4 nos ) , cardamom ( 3-4 nos ) , 


 and add onion ( one medium   ,   chopped ) , until the onion becomes transparent , and 



add ginger and garlic ( crushed , 2 table spoons) ,  saute until ginger- garlic's  raw smell goes away.



Now bring down the temperature   and add kashmiri chilli powder ( 1/2    teaspoons ) ,  and coriander powder (1  1/2 teaspoons )  saute until its raw smell goes away !, and



 tomato  (  chopped , 1/2 of a big one  ) , saute until the tomato becomes mushy .


Now  add water ( 1 1/2 cup ) , 


green chillies ( 2 nos ,  whole ,intact )  and curry leaves ( a twig) and allow it to boil for 5 - 10 minutes on medium flame 




Step 3:-  Now add the step 1 cooked chicken gizzards , and cook for another 10 minutes on medium flame .




Step 4 :-   Chicken Gizzard Masala ( Jes Style ) is   ready   ..... Enjoy  with    Steamed rice/ Neer Dosas/  chapattis/ fulkas/Tortillas / Appams    ........JA-Mathew- :)




Elephant Yam/ Chena Stir Fry RECIPE#267





Step 1:-  Wash yam/ chena throughly and set aside .


Step 2:- Heat   oil   (2 table spoons) in a pan , splutter  mustard seeds .
and add chilli powder  ( 3/4 teaspoon) and turmeric powder ( 3/4 teaspoons) 




Now add the step one yam , and combine 


and add pepper powder ( 1/2 teaspoon) , curry leaves ( a twig), ginger garlic powder ( 1/2 teapoon) ,  water  ( 1/4-1/2 cup ) , and 



onion powder   ( 1/2 - 1  teaspoon ) . combine well and cook for 10 - 15 minutes on medium flame.



Now remove the lid  and  add  oil ( coconut oil , 2-3 table spoons )  , and stir  occasionally   until the yam / chena  becomes light brown in color  and dry .


Step 3:- Elephant Yam/ Chena Stir Fry is ready . it goes well  with steamed rice and chapatis  as a side dish    ...  enjoy -JA-Mathew...:) 





Jackfruit Seeds Stir Fry RECIPE#266








Step 1 :- Wash and  clean jack fruit seeds ( 40-50 seeds ) , and remove its 'white film'  cover . 


remove its 'brown thin'. cover , 


and wash it thoroughly , 


and cut the seeds as in the  pic below  and set aside .


Step 2 :- Combine  step 2   seeds, chilli powder ( 1 teaspoon) , turmeric powder( 3/4 teaspoon) , ginger garlic powder ( 3/4 teaspoon), salt , curry leaves ( a twig) ,  onion powder  ( 1 teaspoon) , 





and water ( 1/2- 1  cup ) 


Step 3 :- Cook  20 - 25 minutes on medium falme , untill  the seeds becomes soft [stir occasionally to prevent from sticking and burning] .

Now remove the lid  and  add  oil ( coconut oil , 2-3 table spoons )  .


and sauté  occasionally   until the seeds  becomes light brown in color  and dry .



Step 4:- Jackfruit Seeds Stir Fry  is ready .  Enjoy :)  ... -JA-Mathew...:) 



Prawn Masala II RECIPE#265






Step 1:- Heat  vegetable oil   (2 table spoons) in a pan , splutter  mustard seeds ( 1/4 teaspoon) , cardamom ( 2-3 nos) and fennel seeds ( 1/2 teaspoon) .


 add ginger garlic paste ( 2 teaspoons )   saute  for 2-3 minutes  , and add onion ( 1/2 of a big one , sliced ) , saute until the onion becomes golden brown in color . 



now bring down the heat and add  chili powder (1 teaspoon) turmeric powder  ( 1 teaspoon ), ans  coriander  powder  ( 2 teaspoon ),  saute  for  2-3 seconds .


add tomato ( one , chopped ) , saute until the tomato becomes mushy , 


add water ( 1 1/2 cup ) and allow it  to boil , 


now add the prawns ( 16 oz ~ 1 lb~ 1/2 kg ) 


cook for 20 - 22 minutes on low- medium flame
