Step 1:- Combine whole purpose flour ( 2 cup) , oil ( olive / ghee/ vegetable oil 3 table spoons) , sugar ( 1 teaspoons ) and salt .
Step 2:- Knead it well ( by adding warm milk / water ) until it becomes soft and smooth ,
and cover it with wet paper towel . And leave it just like that for minimum 2-3 hours .
Step 3:- Melt butter ( 1/2 cup ) and ghee ( 1/2 cup ) and keep aside .
Step 4:- Knead it ( step 2 dough) again and make 6- 9 small equal sized balls . Brush "oil' ( step 3) over it and cover it with the wet paper towel for another 10- 20 minutes .
Step 5:- Press each balls ( step 4) into a small patties and apply oil ( step 3) over it and keep it for another 5-10 minutes .
Step 6:- Spread each patties ( step 5) into a thin layer as in the picture below .
And brush oil ( step 3) over it and make long cuts over it with a pizza cutter as in the picture below .
fold both sides to the center , and roll it together ( make sure the small cuts are secure in the centre ) , and then stretch both ends and twist it and
make round ''roses " as in the picture :) .
Step 7:- Heat a flat pan ( nonstick ) , apply oil ( step 3) and spread it ( the Step 6 roses with our palm or with a roller ) as in the picture below .
place it on hot ( step 7) pan , and turn it occasionally on both sides , untill it gets golden brown in color .
Step 8:- Stack the parottas together , and press them from the sids ( with hands ) .
Step 9:- Kerala Parotta :) is ready ..... Enjoy with your favorite curries!!!!!!
