Step 1:- Wash 30-40 spinach leaves for 2-4 times .
Step 2:- Boil water with 2-4 teaspoon of salt and add the washed spinach leaves, and '' COOK'' for 2-4 minutes.
Step 3:- Immediately transfer to a cold water to retain the green color, as in the picture.
Step 4:- Make a smooth paste with spinach leaves, 2-3 green chillies, 2 garlic pieces and 1 '' ginger root. And keep aside.
Step 5:- Heat a pan ( Non-Stick) and add 1 table spoon of butter .
Step 6:- Fry Paneer cubes (250 grams) until it gets light brown color on its edges as in the picture below , and keep aside.
Step 7:- Heat a pan and add one table spoon of butter.
Step 8 :- Add a bay leaf , 1 teaspoon of cumin seeds .
Step 9:- Add add 3/4 chopped onion and saute until the onion becomes light brown.
Step 10:- Add add a chopped tomato and saute until the onion becomes soft and mushy .
Step 11:- Allow to cool and grind into a smooth paste
Step 12:- Add the paste in a pan ( step 10), and add 1 teaspoon of kashmiri chilli powder, 2 teaspoon of turmeric powder, and a pinch of asafetida. And saute for few minutes,
Step 13:- Add the spinach paste ( step 4) , mix well and saute for few minutes.
Step 14:- Add 2 table spoon of cashew paste , and continuously stir for 4- 7 minutes. And add 1/4 cup of water and cook for 10 minutes.
Step 15:- Add the fried Paneer ( step 6) . and cook for another 2-5 minutes
Step 16:- Add 1/2 cup of cream/ whole milk. and cook for another 3- 5 minutes.
Step 17 :- Palak paneer is ready , serve hot with jeera rice / steamed rice / chapatis / fuilkas......
