Step 1:- Make a smooth paste with 5-7 garlic, 3-5'' ginger root, 1 1/2 teaspoon of fennel seeds, 5-7 cloves, 6-8 cardamom, 1/2 teaspoon of cumin seeds, 1 1/2 teaspoon of mustard seeds, 4-5 cinnamon sticks , 1 1/2 teaspoon of black pepper corns , 2-3 dried red chillies and 2 teaspoon of white vinegar .
Step 2 :- Heat 2 table spoon of vegetable oil in a pan and add a finely chopped onion. Saute until it gets transparent .
Step 3:- Bring down the heat ,add 1 1/2 teaspoon of turmeric powder, and combine well.
Step 4:- Add the ''paste ( step 1) '', saute for 5-7 minutes on a low medium flame .
Step 5:- Add 1 1/2 cup of water , mix well and allow to boil.
Step 6:- Add 1 kg/ 2 lb of beef pieces .
Step 7:- Combine well ,switch off the flame and leave it 'like that' for minimum 1/2 an hour for marination .
Step 8:- Cook on a medium flame for 30 minutes , add more water if necessary. Add 1/4 cup of coconut powder or 1/2 cup of coconut milk and cook on a low medium flame for another 20 minutes .
Step 9:- Beef Vindaloo ( Kerala style ) is ready ....Enjoy with steamed rice /chapatis/tortillas/fulkas.... ........:) JA- Mathew.
