THIS RECIPE IS ADAPTED FROM AN ARTICLE ON NDTV FOOD BY CHEF Aditya Bal !
Step 1:- Wash the fish ( 2-3 lb/ 1-1 1/2 kg ) thoroughly for 2-3 times , removes all the "scales" , and make a cut on its ( ventral ) sides , remove all the entrails and the gills , wash again thoroughly .
And cut into 3-4 pieces ,
"marinate "the fish pieces with lemon juice , turmeric powder and salt keep aside
Step 4:- Heat a pan ( NON STICK ) . Add 4-5 teaspoon of oil .
Add the "marinated "fish pieces ", and fry for 4-5 on medium flame , now flip to the other side . and keep aside .
Step 5:- Crush 3-4 cardamom , 3-5 cloves and a cinnamon stick and keep aside .
Step 6:- Splutter mustard seeds, cumin seeds and step 5 spices in the same pan ( step 4) ,
add onion paste ( paste from a big red/ yellow onion ) , saute until the oil separates from the paste
now add "crushed ginger and garlic" ( 2-3 table spoon ) , saute for 3-4 minutes
Now add 1/2- 3/4 cup of fresh curd , and turmeric powder , a bay leaf and a 1/2 cup of water .
add 1/4 cup of golden or black raisins ,
add another cup of water and salt allow to boil
Step 7:- Now add the step 4 fried fish pieces , 1-2 table spoons of lemon juice , 1 teaspoon of palm sugar and 3-4 green chilles ( splitted ) ,
and cook for 20- 25 minutes on low medium flame.
