Step 1:- Heat 2 table spoon of vegetable oil in a pan . Splutter a teaspoon of mustard seeds.
Add 2 teaspoon of turmeric powder, 2 teaspoon of kashmiri chilli powder, and 1 teaspoon of coriander powder , saute for 1-2 seconds . And
add onion ( 1/2 of a big one , finely chopped) , saute for 3-4 minutes and
add crushed garlic cloves ( 3-4 ) & ginger root ( 3'' of ) , and 2-3 green chillies ( splitted ) , Saute until the onion becomes transparent .
Now 1 1/2 teaspoon of fenugreek powder, Combine well
And add tomato ( 2 nos , chopped )
and 2-3 twigs of curry leaves , a coccum ( meen puli) [ http://en.wikipedia.org/wiki/Garcinia_indica] ,
Step 2:- Now add sliced Ayala ( Mackerel ) (2 lb /1 kg) pieces , Combine well .
And cook for 18-22 minutes on low flame , until the fish is done .
Step 3:- Nadan Ayala ( Mackerel ) Curry ( Kottayam Style ) is ready...........:) Enjoy with Kappa , steamed rice/chapattis/ tortillas..............- JA Mathew-
