Jes Special , Kerala Style Mashed Carrot And Potato RECIPE #295





Step 1:- Boil  carrot   ( 9-10  medium sized  ) , potato  ( 2 nos  , large ) and sweet potato ( 1 , medium sized )   , 



mash  them , 






and set aside . 



Step 2:- Heat a pan and add oil ( any vegetable oil, 1-1 1/2 table spoons  ) and  splutter mustard seeds (1 teaspoon )  ,  add cumin seeds ( 1/2 teaspoon )   ,  black pepper corns ( 9-12 nos ) , 



now add onion   (   finely chopped ,1 big red  ~ 1 1/2 cup  ), add   garlic  ( chopped  , 2-3 table spoons   ginger ( chopped , a big pieces  of a root , OR chopped  2-3 table spoons  ) ,  and green chillies   ( finely chopped , 4-5  nos ) , 



saute (  until onions becomes  transparent and light brown onion color ) , now add curry leaves ( finely chopped , 2-3 twigs )  , saute and , 


now  add step 1 mashed carrot- potato - sweet potato , COMBINE , 


 and add pepper powder( 1 1/2 teaspoons ) and salt  , 



and COMBINE . 



Step 3:- Jes Special , Kerala Style Mashed Carrot  And Potato  is ready .......: -) it goes well with   with  steamed rice/ Chapathi/ paratha/Tortilla ..... Enjoy :) J A  Mathew .
