Step 1:- Cut Fresh Paneer ( 800 g~1.7lb~0.8kg ) into
pieces ( as in the picture below ) and set aside .
Step 2:- Heat a pan and add oil ( any vegetable oil, 1-1 1/2 table spoon ) splutter mustard seeds ( 1 teaspoon ), cloves ( 3-5 nos ), now add curry leaves ( 2 twigs of ), garlic ( julienned , 5-8 cloves ) ginger ( julienned , 3'' of a root ) , and green chillies ( 4-6 , as such ) , dried red chillies ( 3-4 nos ) , saute for 2-3 minutes
and add onion ( cubed , 1 big red one ) , saute ( until onions becomes transparent and light brown onion color ) ,
now BRING DOWN THE FLAME and add Kashmiri red chili powder ( 1 teaspoon ) , turmeric powder ( 3/4 teaspoon ) , coriander powder (1 1/2 teaspoons ) , pepper powder ( 3/4 teaspoons ) , fennel seed powder ( 3/4 teaspoon) , and cardamom powder ( 3/4 teaspoon) , saute until you get a nice aroma of the "powders" ,
and now add tomato ( 1 , chopped ) , and water ( 1/2 cup ) combine , and cook for 2-3 minutes on medium flame ,
Step 3:- Now add step 1 paneer ,
combine and cook for 15- 20 minutes on medium flame .
Now add sugar ( brown sugar , 2 teaspoons ) ,
and curry leaves ( 2 twigs ) ,
combine and cook for another 4-5 minutes on low flame .
Step 4 :- "Jes Special" Paneer Masala is ready .......: -) it goes well with with steamed rice/ Chapathi/ paratha/Tortilla ..... Enjoy :) J A Mathew .
