Step 1 :- Soak Green bean / Moon dal / Cheru payar [ https://en.wikipedia.org/wiki/Mung_bean ] ( 1 1 /2 cups , 4-8 hours ) and cook them by adding water ( 1/2 cup ) and salt ( one pinch ) [ if you use instant pot , use settings - Manual , 18 minutes on high ] . and keep aside
Step 2:- Make a 'medium thick' smooth batter with whole purpose flour ( 1 1/2 cup ) , turmeric powder ( 2 pinches ) salt , water ( 14- 1/2 cup ) , and sugar ( 1 table spoons ) and set aside .
Step 3:- Prepare jaggery / sarkkara [ https://en.wikipedia.org/wiki/Jaggery ] syrup /paani { by combining jaggery ( 3/4- 1 lb ~ 1/2 kg ) and water ( 1/4 cup ) and then bring it to boil , and then allow to cool , now all its impurities make a layer on its top , as a pale white color ( as in the pic 2), remove the 'pale color layer' by a spoon / spatula } , then strain the syrup on a big pan ( as in the pic 3 below ) .
Now heat the pan and add coconut ( freshly grated or frozen , 1 1/2 cups ) , and saute it until ,
its water content completely evaporates ( as in the pic 1 below ) , Now add Step 1 cooked Green gram , Combine and add cardamom ( 2 1/2 teaspoons) and salt ( a pinch ) as in the pic 4 below . Combine and saute the mixture , until all its 'water content' evaporate . And then allow to cool it .
Step 4:- Take a scoop out of it , and
shape it ( into a smooth ball) with our hands , as in the pic below . And keep aside .
Step 5:- Heat another pan , add oil ( any vegetable oil , 1 1/2 cups ) , and heat oil .
Now dip the step 4 balls on step 2 batter ( make sure all its sides are coated well ) , and place them on oil ( hot oil ) , and fry it ( it will take 40 sec - 1 minute , each side ) . Now place the ' Sughiyan on a paper towel to absorb its extra oil .
