STEP 1 :- Mash banana ( 5 nos , over ripened ) and set aside .
STEP 2 :- Preheat the Oven to 375 degree Fahrenheit / ~ 190 Celsius .
STEP 3 :- Beat egg whites ( from 4 eggs ),
until it forms soft peaks and set aside .
STEP 4:- 'Prepare' Oven proof pan ( 3 loaf pans - 8"*3 1/2 "* 2 " / 20.3 cm *9.8cm*6.3cm OR 2 round pans , 8 Inch ) and set aside .
STEP 5 :- In a mixing bowl , beat butter ( one stick ,1/2 cup ) , oil ( 1/2 cup ) , and sugar ( white , 1 1/2 cups ) ,
well ( for 3-6 minutes on medium flame ) and
add egg yolks ( 4 nos ) ,
and beat for another 3-4 minutes ,
now add cinnamon powder ( 3/4 teaspoons) , salt ( 1 pinch ) , vanilla essence ( 2 teaspoons ) and lemon juice ( from half of a lemon ) , combine/ beat and add
milk ( 1/2 cup ) and beat / combine well .
STEP 6 :- Now add all purpose flour ( 2 1/2 cups ) , baking powder ( 1 1/2 teaspoons ) , and baking soda ( 1 teaspoon) , combine / beat well .
Now and STEP 1 banana , beat for 2-3 minute on medium .
Now STEP 3 egg whites and fold it well ( DO NOT BEAT AT THIS POINT )
Pour the prepared batter ( STEP 6) onto STEP 4 pans
STEP 7:- Bake for 45- 60 minutes ,
( until a tooth pick comes out clean ,when we insert into the cake ) .
