Broiled Tilapia RECIPE #44

Broiled Tilapia






 Step 1:- Make a fine paste with  few cilantro leaves , 1/2 tomato ,  1/4 Onion ,3 inch of ginger root, 2-5 garlic cloves, 2-4 green chillies and  5-6 curry leaves .




Step 2:- Mix the paste (Step1) with salt, 1/4 teaspoon of turmeric powder, 1/4 teaspoon of Chilli powder , and 2 teaspoon of soy sauce.


Step 3:- Marinate  Tilapia ( 4 nos)  with 'the paste  ( step 2) ' for 2-3 hours.


Step 4:- Broil  the marinated Tilapia for  about 10 minutes on each side .

Calamari - Tomato - Coconut curry ( Kerala Style ) RECIPE #43





Step 1:- Cut (1 lb of ) Calamari  steaks / Grande Calamari   into small cubes .



 Step 2:- Heat 2 table spoon of vegetable oil  in a pan , splutter  2 teaspoon of mustard seeds  add chopped onion ( I used  2 white onion) .Saute until  the onion gets transparent .

  


Step 3:-  Add 2-3 splitted green chillies, 2 cardamom, 1/4 of a  star anise ,3-4 garlic cloves ( crushed ), 3 inch of ginger root( crushed )  and 2 teaspoon of fennel seeds, saute for few minutes .




Step 4:- Bring down the heat and add 1  1/2 teaspoon of chilli powder, 2 teaspoon of coriander powder, 2 teaspoon of turmeric powder and 1/4 teaspoon of thyme  saute for few seconds and add tomato ( 2 nos  chopped)Cook for few minutes  in medium flame (with little water ) until the tomato becomes  mushy , then add few curry leaves, 2-3 bay leaves. 





 Step 5:- Switch off the flame .Add the ''chopped calamari'' , 2-3 pieces of black coccum/ Meen puli  (  its optional ) , Mix  well and  keep it for 2 hours.

Step 6:- Cook the ''marinated calamari ''with 1 -2 cup of water for 25- 30 minutes in  medium flame .

Step 7:- Bring down the heat  and add 1/2 cup of coconut paste . Cook for  5- 10 more  minutes in low flame .




Step 8:- Enjoy   the Calamari - tomato - coconut curry  with steamed rice ,fulkas, tortillas...... :) - JA- Mathew-

Meen Thoran /Meen Peera/ Fish Thoran Kerala style RECIPE #42











Step 1:-  Cut  2 lb/1 kg  of fish   [ I used Swai fish fillet  ] into small cubes.


Step 2:- Marinate fish cubes with   1 1/2 cup of grated coconut , 2 teaspoon of turmeric powder, 1- 2  teaspoon of  kashmiri chilli powder , crushed garlic cloves ( 2-3)  , crushed  ginger roots ( 2 inch ), 2-3 splitted green chillies , 4-8 curry leaves , 2 teaspoon of crushed cumin seeds ,  1 -2 Meen puli (  Black Coccum ) and salt for  1 hour.



Step 3:- Heat 2 table spoon of oil in a pan , splutter 2 teaspoon of mustard seeds and add  2-3 dried red chillies.



Step 4:- Add a onion/ savala (  chopped)   and  3-4 pearl onion ( kochulli)



Step 5:- Saute until the  onion  becomes transparent .


Step 6:- Add the ''marinated fish cubes'' ( step 2) , add 1/4 - 1/2 cup of water and cook for  15-20 minutes in medium flame until all the water evaporated from the ''meen perra''.


Step 7:-   Meen Thoran /Meen Peera/ Fish Thoran   is ready....Enjoy ..-JA-Mathew-

Tomato Curry /Kerala Style RECIPE #41

Step 1:- Chop  a onion , 3-5 pearl onion, 3 tomatoes   and keep aside .



Step 2:- Crush 2 teaspoon of coriander seeds, 1 teaspoon of cumin seeds and 1 teaspoon of fennel seeds and keep aside.



Step 3:- Crush 2 -3 garlic cloves , 2 inch of ginger root and keep aside.



 Step 4:- Heat 1 table spoon of vegetable oil ( Canola)  , splutter 1 teaspoon of mustard seeds, add chopped Savala , Saute until it becomes ''transparent ''.


Step 5:- Add  step 3 ''crushed ginger- garlic paste'', 2-3 splitted green chilies, and few curry leaves


Step 6:- Add step  2 ''crushed  coriander-cumin-fennel seeds'' ,Saute for few seconds.


Step 7:-   Bring down the heat and add 1 teaspoon of  turmeric powder, and 1 teaspoon of kashmiri chilli powder, chopped tomato ( Step 1)  , saute for few minutes .



Step 8:- Add 1  1/2 cup of water  and salt . Cook for 15 minutes in medium flame .


Step 9:- Now add 1/2 teaspoon of garam masala or chicken masala powderCombine   well and boil for few more seconds. Add   few chopped cilantro.




Step 10 :- Serve  hot , it goes well with  Steamed rice ,Fulkas,Chapathi,Tortillas...........  :)  JA-Mathew  :)........

Egg Fry / Mutta Fry / Kerala style RECIPE #40

Egg Fry 2



Egg Fry

Step 1:-  Boil  3- 5 cups of water with  2 teaspoon of salt. Add 4 eggs , allow to boil in low flame for 5 -10 minutes.


Step 2:- Remove the shells from the boiled eggs  and keep aside.




Step 3:- Heat 1-  11/2  table spoon of vegetable oil ( canola )  in a pan ( medium flame ) ,  add  1 teaspoon of fennel seeds and   paste of [ 2 teaspoon of turmeric powder ,  1 1/2 teaspoon of  black pepper powder,  2 pinch of chilli powder and salt].


Step 4:- Add the peeled eggs ,  saute for 5 - 10 minutes in low flame , until the egg  gets properly mixed with the'' paste'' .




Step 5:-  Add few curry leaves and allow to get roasted .


Step 6:-   Egg Fry  / Mutta  Fry is ready.....Enjoy....JA-Mathew-
