Rava Upma ( Kerala Style ) RECIPE#210



Step 1:- Heat a pan 



add  table spoon of  ghee / vegetable oil ( canola) ,splutter 2 teaspoon of mustard seeds ,



now add  curry leaves ( 1 twig),



 add  onion (  1/2 of a bog one  FINELY chopped , yellow/white ) ,      green chillies  ( 3-4  FINELY chopped  ), ginger ( 3" FINELY chopped  ) ,  carrot ( one  FINELY chopped ).  Saute for 2-3 minutes . 



Now add celery ( 2  stalks FINELY chopped ) , and  Saute  until  the onion becomes transparent . 




Now add the  Rava / sooji ( 1 1/2  cups ) 


 "Roast"  the rava / sooji   for 4-6 minutes on medium high flame , add salt .




now add 3 1/4 cups of hot water  (  add water slowly and  combine  at the same time  ) , 




combine well . Cook for another 1-2 minutes on low flame .


Step 2:-    Rava/ Sooji  Upma ( Kerala Style )  is  ready.......  Enjoy  with banana/white sugar/brown sugar. it goes well even with curries ......  ....:) ...... JA -Mathew- 



Banana Cupcakes RECIPE#209







Step 1:-   Preheat the oven to 300 Degree Fahrenheit .

Step 2:- Grease  a cupcake pan  and keep aside  OR USE  nonstick  farberware cupcake  pan.

Step 3:-   Melt 1/2 cup of butter in a mixing bowl .



Step 4:-   Add 1 1/4  cup of sugar  , 



2  eggs , 1/2 teaspoon of salt  to step 3 bowl .



  Step 4:-  Mix well with a hand mixer.




Step 5:-   Mash 4  bananas (  2 ripened  and  2 ''over ripened''    ) ,  




and add 2-3 drops of Vanilla extract and combine well .  And keep aside .




  Step 6:-      Combine  3 1/2  cup of all purpose flour  ( maida) , 1 teaspoon of baking soda and 2  teaspoon  of baking powder . 





Step 7:-   Now add  Step 6 flour to step 4 bowl ,Combine  well with a hand mixer.




Step 8:-   Now add step 5  mashed banana 



Combine  well with a hand mixer.



Step 9:-   Fill each cups  three fourths full ( ~ 2 tablespoon ) . [ This  mix/ 'batter' will make 15-17 cupcakes  ]




Bake for  16 - 22  minutes , 




until a '' wooden toothpick '' inserted into the center of the  cup cake comes out clean.




Step 10:-  Remove from the  cupcake pan  and place in a  cooling rack for 15 minutes .



Step 10:-   Banana Cupcakes  are ready...........Enjoy.......  JA- Mathew- ......:)

Easy Beef Stew ( with *minimum spices* and with out oil ) RECIPE#208










Step 1:-  Cut  beef (  1 1/2  lb   ) , carrots 2-3 ) ,  celery 3-4)   and  red  onion  (  3/4  of a big one )  into  small cubes  .  Add 2-3 teaspoons of pepper powder ,2 teaspoon of turmeric powder,  3" of crushed ginger , 1-2 crushed garlic cloves  and salt  .





Step 2:-  add 2 -3 cups of water ,  1-2 twigs of curry leaves and a bay leaf Combine  and cook for 45- 50 minutes on low medium flame ( until the beef pieces are done ) 




Step 3:-   Now add  a cup of cooked green peas , combine and cook for another 5 minutes .



 Step 4:Easy Beef Stew ( with  *minimum spices*  and  with out oil )   is ready...........Enjoy with chapattis/tortillas /fulkas / steamed rice .......:)  JA- Mathew- ......:)

Kale - Tilapia Thoran ( kerala Style ) RECIPE#207







Step 1:- Heat a pan , add 1 table spoon of vegetable oil ( canola) ,splutter 2 teaspoon of mustard seeds  and 1 teaspoon of cumin seeds .




 Now add kale ( finely chopped ,  one bunch ) ,  tilapia  ( 4-5 chopped) ,   onion (  2 nos  chopped , yellow/white ) ,  garlic cloves (2-3  chopped),    green chillies  ( 3-4  splitted ), ginger ( 3" chopped ) , curry leaves ( 1 twig) , salt, kashmiri chilli powder ( 1/2 teaspoon ) , fenugreek powder ( 1/2 teaspoon )  and turmeric powder ( 1 teaspoon ) .


Combine well .



 Now add 1 1/2  cup of grated coconut OR  1 cup of  dry  coconut  powder  and  1/12 coccum /meen puli .


 Cook for 20 minutes on medium flame .


Now open  the lid and  cook for another 4-5 minutes on high flame,  until the  water  has completely evaporated . 


Step 2:-  Kale -  Tilapia Thoran ( Kerala Style ) is ready ....Enjoy as a side dish for  steamed rice /chapattis/tortillas /fulkas ........JA-Mathew- :) 



Egg Masala Kerala Style RECIPE#206









Step 1:-Boil 5-7 cups of water with 3-4 teaspoon of salt ,  add  7-10 Eggs and allow it  to boil in a low flame for 5- 7 minutes.  Then Remove the shells from the boiled eggs and keep aside.


Step 2:- Heat 1 1/2  table spoon of vegetable oil ( canola )  in a pan ( medium flame ) ,  add 1 1/ 2 teaspoon of turmeric powder ,   1 teaspoon of   chilli powder and salt . Saute for few seconds until its "raw smell" goes away 



Step 3:- Add the eggs  ( step 1) ,  


saute for 5 - 10 minutes in low flame , until the egg  gets well "roasted" and  "fried" on its sides  . And keep aside .



Step 4:-  In the same pan add  3-4  tablespoon of vegetable oil ,  Splutter 2 teaspoon of  mustard seeds,  1 teaspoon of fennel seeds2-3  pieces of cinnamon sticks, 2-3 cardamom and  2-5  cloves  .Saute for few minutes until you get a "nice aroma" of  the spices :) .


 Now add  chopped  ginger  ( 3 table spoon )  , chopped Garlic cloves  ( 1 table spoon ), saute for another 1-2 minutes , 



Add   chopped onion  3- 4  nos )   saute until the onion becomes  transparent .


 now add  green chilies (  sliced 4-5 nos  )  , and few curry leaves ( a twig) , And  saute until the onion gets  golden brown in color.


Step 5:- Bring down the heat  and add 1 1/2  teaspoon of turmeric powder , 2 teaspoon of  kashmiri chilli powder, 3 teaspoons of coriander powder ,  and   salt  . Saute for few seconds.



 Now add 2-3 finely chopped tomatoes , combine and cook for  2-3 minutes ,



  Now add 1/2 cup of chopped cilantro and  a  cup of water , combine well ,



COOK  for 10-12 minutes on low flame until the tomatoes becomes mushy and the  gravy becomes thick  .


Step 6:-  Now add  the eggs ( Step 3)   , 



 "cook" for an another 8-10 minutes on  medium flame .



Now add 1/2 cup of chopped cilantro.


Step 7:-  Egg Masala  Kerala Style  is ready  -....Enjoy with  aappams ( vellayappam , palappam ) / steamed rice /chapattis/tortillas /fulkas ........JA-Mathew- :)
