Varutharacha Kadala Curry ( Kottayam Style ) RECIPE#73







 Step 1:-  Soak a cup of KADALA for 8- 10 hours/ over night 




Step 2:- Drain water from the KADALA . 



Step 3:- Microwave the soaked KADALA  with 1/2 teaspoon of turmeric powder salt and  1/2-1 cup of water for 12- 15 minutes . And keep aside.


Step 4:-  Heat a pan , add 1/2 - 1cup of grated coconut .Saute for few minutes 



Step 5:- Add 2-3 cinnamon sticks , 2 cardamom . 5-6 black pepper and 2 teaspoon of fennel seeds . Continuously saute until the grated coconut becomes brown in color.





Step 6-Bring down the heat and add 1 1/2 teaspoon of kashmiri chillipowder,2 teaspoon of coriander powder and 1/4 teaspoon of turmeric powder .Saute for few seconds.



Step 7:- Add a chopped tomato , mix well .Remove from flame and allow to cool


Step 8:-  Grind into a smooth paste, and keep aside.



Step 9:- Heat 2 tablespoon of vegetable oil  in a pan . Splutter 2 teaspoon of  mustard seeds,    2-4 dried red chillies and  1/4 cup of  coconut pieces ( thenga kothu)   .Saute until the coconut pieces becomes brown in color..


 Step 10 :- ''At this point'' add   add '' sliced 3/4 of a big onion  , 4-6 garlic cloves, 3 inch of ginger root and a pinch of asafoetida. Saute  until the onion becomes transparent .


Step 11:- ''At this stage''   bring down the flame and add  step 8 paste and mix well with 1/2 cup of water. 


Step 12:- Add step 3 ''microwaved KADALA'' and mix well.




Step 13:- Add 1- 2 cup of water , 4-10 curry leaves ,  1 teaspoon of garam masala powder(  How to prepare garam masala powder :-  ( http://jesacos5.blogspot.com/2013/11/biriyani-powder-garam-masala-powder.html )  salt and cook for 30- 45 minutes on medium-high flame . For spicy curry add  1/2 more  teaspoon of pepper powder and 1/2 teaspoon of kasmiri chiili powder ''at this stage ''




Step 14:- Varutharacha Kadala Curry ready . Its a best side dish for Dosa, Chapattis, steamed rice ...........:) :) Enjoy  JA- Mathew-
