Step 1:- Cut 1 1/2 lb of steak into 'thin long strips' .
Step 2:- Make a smooth paste with 2-3 green chillies , 1/4 cup of chopped cilantro , 1/2 cup of chopped spring onion , 4-5 garlic cloves , 2 teaspoon of olive oil , lemon juice from half of a lemon .
Step 3:- Marinate the Step 1 pieces with Step 2 Paste , 1 teaspoon of cumin powder, 1/2 a teaspoon of chilli powder ( I used kashmiri chiili powder ) and salt for 2- 7 hours.
Step 4:- Julienne a carrot , a green pepper, a red pepper , 2-4 asparagus , 2-3 celery and a onion . And keep aside .
S Step 5:- Heat a pan on stovetop and then add 1 teaspoon of vegetable oil ( canola ) and then heat the oil.
S Step 6:- Now add the' Step 4 vegetables' , sprinkle 1/2 teaspoon of pepper powder and salt . And continuously saute for 7-8 minutes on high flame ,
until the vegetables become soft and onion becomes transparent as in the picture below . And keep aside .
Step 7:- Now add the marinated steak pieces ( step 3 ) . Cook for 2- 3 minutes on high flame .
Step 8:- When the steak gets done, add the 'Step 6 sautéed vegetables ' .
Combine well with 1-2 teaspoon of lemon juice .
Step 9:- Steak Fajitas ( Italian style ) is ready........ enjoy with fulkas/tortillas/chapattis ...............:) JA- Mathew-
