Step 1:- Clean and cut Red Snapper ( 2 lbs/ ~ 1 kg ) into 1 1/2 inch pieces and keep aside .
Step 2:- Make a smooth paste with onion ( 1/4 of a big one ) , garlic ( 2-3 cloves ) , ginger ( 1 Inch piece ) , green chillies ( 3- 4 nos ) , peppercorns ( 8-10 nos ) , cardamom ( 2-3 nos ) , and cloves ( 2-3 nos ) and set aside .
Step3 :- Heat a pan , add a table spoon of vegetable oil , splutter mustard seeds ( 1 teaspoon) , fennel seeds ( 1/4 teaspoons ) , and dried red chillies (2-3 nos ).,
Add the step 2 paste , saute until its color turns to light brown .
Now bring down the temperature and add kashmiri chilli powder ( 2 1/2 teaspoons ) , turmeric powder ( 1/2 teaspoon ), fenugreek powder ( 1 teaspoon ) and coriander powder ( 3/4 teaspoons ) , saute until its raw smell goes away !, and
Add the step 1 fish pieces ,
coat them well with the masala and add a tomato ( a medium sized chopped ) , and tamarind ( 2 teaspoons/ a small lemon sized ) .
add water and cook for 30-35 minutes on medium flame , until fish pieces are well done .
now add coconut milk ( 3/4 cup ) , and cook for another 5 minutes on low flame , now add coconut oil ( 1 tablespoon) , and remove from flame .
Step 4:- Red Snapper( Chemballi ) Mappas / Fish Mappas - Jes Style :) is ready...........:) Enjoy with steamed rice/chapattis/ tortillas./ dosas.............- JA Mathew-
