Step 1 :- Prepare Idly batter and set aside .
Step 2 :- Heat oil and splutter mustard seed and cumin seeds .
Step 3 :- Saute onion ( 1 cup , finely chopped ) , garlic ( 1 teaspoon , finely chopped ) , ginger ( 1 table spoon , finely chopped ) , and green chillies ( 3-4 finely chopped ) .
and add mushroom ( 1/2 cup . finely chopped ) once the onion becomes transparent , and saute until the mushroom becomes soft .
Now bring down the temperature and add kashmiri chilli powder ( 1/2 teaspoons ) , turmeric powder ( 1/2 teaspoon ) and coriander powder ( 1/2 teaspoons ) , saute until its raw smell goes away !, and
Now add mixed vegs ( I used frozen one ) , combine and cook for 3-4 minutes on medium flame . and set aside .
Step 4 :- Boil water ( 1-2 cups ) in a big pan , and place a steaming rack ,
Place a 8 " round pan or any round steel plate , grease it with oil ,
Pour idly batter ( 2- 3 cups ) , close the lid and steam it for 4-5 minutes .
Now open the lid and place the step 3 mixture , evenly on top of the the 'batter ' ( as in the picture below ) .
And 'cover it 'again with idly batter ( 1-2 cups ) evenly on the top of the mixture (as in the pic below ) , and steam it for 20 -30 minutes
on medium flame ( until a tooth pick inserted into center of the steamed cake comes out clean ).
allow it to cool for 5-6 minutes .
Step 5 :- Spicy& Stuffed Steamed Cake " with Idly Batter is ready .....
