Step 1:- Heat a pan , add oil ( 1 table spoon) and splutter mustard seeds ( 1 1/2 teaspoon ) , fennel seeds ( 1/2 teaspoon),
kashmiri chilli powder ( 3/4 teaspoons ) , turmeric (3/4 teaspoons ) , onion powder ( 1 1/2 teaspoons ), ginger-garlic powder ( 3/4 teaspoons) , saute until its raw smells goes away .
Step 2:- Now add carrot ( 3 cups, sliced as the picture below ) ,
add green chillies ( 2-3 nos, splitted ) salt , water ( 2-3 table spoons )and curry leaves ( 1 twig ).
Combine well and cook for 12 -15 minutes and now remove the lid , add oil ( 1/2 teaspoon , add more if needed ), and sauté in between ( another 4-5 minutes ) until the carrot becomes "soft and dry" .
Step 3:- Spicy Carrot Stir Fry is ready ....Enjoy as a side dish for steamed rice /chapattis/tortillas /fulkas ........JA-Mathew- :)
