Jes Special Spicy Thalapakattu Chicken Biryani ! RECIPE #298






Step 1:- Grind garlic  ( 15-18  nos, OR 1 1/2 cloves  )  , mint leaves  ( 1/2 cup  ) ,   pearl onions  ( 10--15 nos)  , green chillies  ( 4-6 nos  ) , ginger  ( 3'' piece of a root )  , coriander leaves  ( 1/2 cup  )  , and set aside 


Step 2:- Combine coconut milk powder ( 5 table spoons )  and cashew paste ( 4 table spoons )  and set  aside  .



Step 3:- Grind cardamom ( 9-10 nos )  , fennel seeds ( 1 table spoon ) ,   peppercorns ( 20-25 nos)  , anistar ( 2-3 petals ) , cloves ( 7-8 nos )  , cinnamon sticks ( 2-3nos  , small )  , and set aside 



Step 4:- Grind  tomato  (  2,  medium sized   ) and set aside .



Step 5:- Wash , clean  and cut boneless chicken thighs ( 2 1/2 lbs ~ 1 1/4 kg )  ,  marinate it with turmeric powder ( 1/2 teaspoon )  and kashmiri chilli powder ( 3/4  teaspoon ) and lemon juice  ( 2 tablespoons )  for 20- 60 minuets and set  aside .



Step 6:- Wash and soak  rice ( basmati  rice 2 1/2 cups )  and  keep aside.

Step 7:- Heat a pan and add ghee ( 2-3  table spoon  ), 


add onion   (  red ,  3 big nos ,  sliced  ) and  saute  (  until onions becomes  transparent and light brown onion color )  .



now add   Step 1 paste  



now add step 3 powder , turmeric powder  ( 1 1/2 teaspoons) ,  and Kashmiri chili powder ( 2 teaspoons )  , combine and 



now add   Step 4 tomato  paste  , and combine , 




now add   Step 5  Chicken  , and saute , 



and add  water ( 1/4 cup)  and salt ,  cook ( until chicken pieces are 75% done )  .




now add   Step 2 paste  , COMBINE , 



now add  step 6  rice  ,  



 add water (  3 1/4  cups , hot water ) 




combine and cook ( until the rice is well done )
