Step 1:- Cook rice ( basmati rice 2 1/2 cups ) and keep aside.
Step 2:- Heat a pan ( non stick preferred ) , add oil ( 2-3 table spoons of any vegetable oil ) , splutter mustard seeds ( 1 teaspoon) , cardamom ( 7-9 nos ) , peppercorns ( 2 teaspoon) , fennel seeds ( 1 teaspoon) and cloves ( 6-9 nos ) saute until you get a nice aroma of whole spices ,
and add onion ( finely chopped , 1 1/2 cups) , saute until onions becomes soft ,
now add garlic ( finely chopped , 2 teaspoons ) ginger ( finely chopped , 2 teaspoons ) and green chillies ( finely chopped , 3-4 nos ), saute for , until onions becomes light brown onion color ,
Now add celery (chopped , 3/4 cup ), carrot ( chopped ,3/4 cup ) , saute for 2-3 minutes,
and add green peas ( frozen , 3/4 cup ) saute for few seconds ,
and add green onions ( finely chopped , 1/2 cup ) curry leaves ( finely chopped , 4 twigs of curry leaves ) and coriander leaves ( finely chopped , 3/4 cup ), saute ,
and add cranberries ( chopped , 1/2 cup ) raisin ( chopped , 1/2 cup ) , and salt combine well , and
add step 1 cooked rice , and COMBINE .
