Step 1:- Cut Paneer ( 800 gms ) into small 1.5" cubes and keep aside .
Step 2:- Wash and soak rice ( basmati 2 1/2 cup) for 20 minutes , drain them and keep aside .
Step 3:- Prepare marinade for paneer . Combine curd ( 3/4 cup ) , Kashmiri chili powder ( 1 1/2 teaspoons) , turmeric powder ( 1 teaspoon) , kasoori methi ( powder , 1/2 teaspoon) , mint leaves ( chopped 1/4 cup ) ,
coriander leaves (chopped 1/2 cup ) ,ginger garlic powder OR paste ( powder 1 1/2 teaspoon , OR paste 4 teaspoons ) , lemon juice ( 3 teaspoons ) and salt in a small mixing bowl . And keep aside .
Step 4:- Marinate Step 1 panner with step 3 marinade ,
and refrigerate it for 30 minutes to 4 hours .
Step 5:- Fry onions ( 3-4 medium sized , chopped ) ,
and keep aside .
Step 6:- Add Ghee OR oil ( 3 table spoons ) in same step 5 pan and add pepper corns ( 1 2 teaspoon ) , bay leaves ( 3-4 nos ) , cardamom ( 5-6 nos ) , cinnamon stick ( 1 medium ) and cloves ( 6-9 nos ) , saute until you get a nice aroma of whole spices , and
now add onion ( 3 medium , finely chopped ), and saute until it gets transparent ,
add ginger and garlic ( finely chopped 3 teaspoons each ) , saute for 5-6 minutes , and
BRING DOWN THE FLAME and add kashmiri chilli powder ( 1 teaspoon) , turmeric powder ( 1/4 teaspoon ) home made biryani masala [https://jesacos5.blogspot.com/2013/11/biriyani-powder-garam-masala-powder.html ] ( 1 1/2 teaspoons ) , and coriander powder ( 3/4 teaspoon ) , saute until its raw smell goes away ,
and now add mushroom ( finely chopped 3/4 cup ,OPTIONAL ) , tomato ( chopped, 2 medium ) and water ( 1/4 cup) . Close it with a lid and cook for 5-6 minutes .
Now open the lid and add green chillies ( 4-5 nos ) ,
cardamom powder and fennel powder ( 1/2 teaspoon each ) , combine
add step 2 rice ,
step 5 fried onions , salt , coriander leaves ( chopped 1/2 cup ) and pepper powder ( 1 teaspoon ) , combine ,
and add water ( hot , 31/2 cups ,[ water :rice = 1.5:1 ] ,
combine , and cook for
10 minutes ( on medium flame ) .
