Urad Dal Dosa RECIPE#72








Step 1 :-  Soak  2 cups of urad dal , 2 teaspoon of fenugreek seeds for 5-8 hours



Step 2:- Drain the  water from the urad dal .


Step 3:- Grind  well  with 1/2- 3/4 cup of water. Keep it for 2-8 hours to ''ferment ''


Step 4:- Just before making the dosa, add salt and mix it well . 
Heat a  pan ( dosa thava), wipe  the pan with  oil , pour 1 ½ spoon of batter in the center and spread it properly ''in a circular way'' ( as in the picture )  with the spoon to get  a very thin dosa . 


Step 5:And after a minute '' sprinkle''  2 teaspoon of ghee . 


Step 6:-Flip the dosa to other side ,cook the dosa from both side until it gets a golden brown color.


Step 7:- Serve hot with chutneys/ kadala curry/fish curry . :) ......- JA-Mathew- 




Tomato- Onion Chutney RECIPE#71





 Step 1:-   Heat 2 tablespoon of oil in pan , add  3-6 red chilies ,2-5 garlic cloves and saute for few minutes  , 2 1/2 finely chopped onion ,  a pinch of asafoetida .Saute until the onion gets transparent  and soft.


Step 2:- Add 2 chopped  tomato .Mix well .


Step 3:- Cook until the tomato  becomes mushy. Remove from flame and allow to cool.


Step 4:-  Grind into a smooth paste.  And transfer to a bowl, and keep aside.



Step 5:-  For tempering , heat 2 teaspoon of  vegetable oil in a pan , splutter 2 teaspoon of mustard seeds, and add 2 dried red  chillies. Pour over  Step 4 Bowl (  'grinded' Paste).


Step 7:-Serve hot with Dosa...... :)

Mushroom- Brussels sprout's curry ( Indian style ) RECIPE #70

Mushroom- Brussels sprout's curry ( Indian style )




Step 1:- Chop one pound ( 1/2 kg ) of medium sized mushrooms

Step 2:- Marinate  Chopped mushroom with 2 table spoon of turmeric powder  for 1/2 an hour.


Step 3:- Heat a table spoon of  any vegetable oil in a pan splutter 1 1/2 teaspoon of mustard seeds  1 teaspoon of cumin seeds ,add  1-2 medium sized  ''sliced'' Onion , add 2-3  chopped garlic cloves,  2 inch chopped ginger root , 3-9 curry leaves and 2 splitted green chilli . And  saute until the onion turns golden brown in color.


Step 4:- Bring down the heat  and add a teaspoon of turmeric powder , 1 teaspoon of garam masala  (  How to prepare garam masala powder :- http://jesacos5.blogspot.com/2013/11/biriyani-powder-garam-masala-powder.html ) ,  1 teaspoon of Kashmiri chili powder , 1/2- 1 teaspoon of pepper powder , 2 teaspoon of coriander powder , salt  and 1 1/2 chopped tomato . Saute for few seconds.


Step 5:- Add the ''Marinated mushroom '' and saute for few seconds.


Step 6:- Add 8-10 chopped brussels sprouts .


Step 7:- Add 1- 1 1/2  cup of water and cook for 30- 50 minutes on medium flame.


Step 8:- Enjoy with  Steamed Rice , Tortillas, Chapattis, Fulkkas and even with DOSA !!!!........ :)

Beef With Vegetables (Indian Style ) RECIPE #69

Beef With Vegetables





Step 1:- Heat  2 tablespoon of vegetable oil in a  pan,add 1/2 teaspoon of cumin seeds, sliced 2 onions .Saute  for few minutes.


 Step 2:-  Add, chopped (  julienne cut  )   garlic(3-4)  2'' ginger ,saute for until the onion gets brown in color.


Step 3:- Now add  1/2 teaspoon of garam masala, 1 teaspoon of kashmiri chilli powder,1 teaspoon of pepper powder,1 teaspoon of turmeric powder . And add chopped vegetables ( 1/2 green pepper, 2 carrot. 1/4 cup cauliflower,5-6 Brussels's sprouts,2-5 yellow beans), Saute for few minutes.


Step 4:- Add 1 pound of chopped beef.And mix well and keep it for minimum 1 hour in room temperature..


Step 5:- Spread on a oven proof pan .

                                     
                                        Step 6:-  Preheat the oven to 400 degree Fahrenheit. And Bake for 40- 60 minutes.

Step 7:- Ready!!!Serve with steamed rice/ chapatis/ tortillas.....

Broiled Chicken Drumstick RECIPE #68








Step 1:-Prepare a paste  with 1 teaspoon of Kashmiri chili powder2 teaspoon of turmeric powder, 1 teaspoon of garam masala http://jesacos5.blogspot.com/2013/11/biriyani-powder-garam-masala-powder.html) , 2 -4 teaspoon of ginger  garlic paste and salt.



 Step 2:-  Marinate 4 -8  chicken   drumsticks   for 2 hours. 



Step 3:-  Preheat the oven to 350 degree Fahrenheit.Bake the marinated chicken pieces  with 1/4 cup of water for 30-35 minutes . And keep aside.





Step 4:-  Place the ''cooked chicken drumsticks ''  on a  ''rack''.


Step 5:-  Broil  the chicken drumsticks  for  about 10 minutes on each side .




Step 6:-   Broiled Chicken Drumstick   is ready ....enjoy ....-JA-Mathew- :) :)
